I wish I could tell you that I’ve been cooking up a storm this past week. That I’ve made incredible gourmet dishes from scratch, completely gluten free. That I’ve used super fancy ingredients like

FLAVOURED sea salt. Anything that uses the fancy spelling of flavor must be good.

I wish I could tell you that I’ve been eating home cooked bowls of nourishing gluten free oats for breakfast…and not

processed guilty pleasures like Chocolate Chex…twice this week.

I wish I could tell you that Parrish and I are still off the dark temptress…

but a buy two get three free deal can make things seem too good to be true. (Even when you know they’re bad for you)

But I can’t tell you any of those things. This past week I have been what I would call “foodie slumming”. I have succumb to food on the go and quick eats. I have drank Diet Coke…three times! Our suppers have been less than exciting: grilled cheeses, tacos, and tapas. But when life gets busy, you persevere. You buckle down and push forward. And you stock you fridge with foods that will get you through, like snack plates with gluten free crackers, 2%milk sharp cheddar, and almonds. And you find lunches that require zero prep time in the morning and are ready in a flash.

Like these little nuggets: Applegate Farms Gluten Free Chicken Nuggets. Fully cooked, ready in 2 minutes, and just darn good. And those nutrition facts:

They’re not half bad either. And with 12g of protein they really fill me up!
