,%20or%20semlor%20(Swedish).%20These%20are%20cardamom%20buns%20sliced%20in%20half%20as%20you%20see%20above,%20and%20filled%20with%20marzipan%20and%20lightly%20whipped%20vanilla%20cream.%20Simple%20but%20utterly%20irresistible,%20cardamom%20buns%20are%20so%20easy%20to%20make%20and%20they%20remind%20me%20of%20my%20Norwegian%20grandmother%20who%20made%20the%20most%20fluffy,%20light%20fastelavensboller%20ever.%20Mine%20are%20a%20close%20approximation%20to%20those%20buns%20of%20yonder,%20except%20without%20the%20raisins%20Granny%20Johansen%20used%20to%20include%20in%20the%20buns.%20Raisins%20are%20a%20little%20too%20virtuous%20for%20these%20confectionary%20gems!%3C/p%3E%3Cp%3EThe%20recipe%20I've%20used%20is%20one%20adapted%20from%20Trina%20Hahnemann's%20Scandinavian%20Cookbook.%20I've%20simply%20exchanged%20plain%20flour%20in%20her%20recipe%20for%20refined%20spelt%20flour%20which%20I%20find%20more%20digestible%20and%20delicious%20than%20plan%20wheat%20flour,%20and%20upped%20the%20caster%20sugar%20content%20slightly.%20Do%20try%20making%20them,%20cardamom%20buns%20aren't%20just%20for%20Shrove%20Tuesday%20and%20make%20a%20great%20weekend%20brunch%20treat%20(when%20you%20tire%20of%20pancakes)%20with%20or%20without%20the%20cream%20and%20marzipan%20filling...%3C/p%3E%3Cp%3EIngredients:%20(makes%2014)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3E1)%20Dissolve%20the%20yeast%20in%20the%20lukewarm%20milk%20in%20a%20bowl.%20Add%20the%20melted%20butter%20and%20stir%20through.%20In%20a%20large%20bowl%20sift%20the%20spelt%20flour,%20cardamom,%20sugar%20and%20salt%20together%20and%20add%20the%20milk%20mixture%20to%20this.%20Add%20the%20egg%20and%20stir%20with%20a%20large%20spoon%20until%20a%20dough%20has%20formed.%20Turn%20it%20onto%20a%20floured%20work%20surface.%20It%20should%20be%20quite%20a%20wet%20sticky%20dough%20and%20I%20find%20the%20easiest%20way%20to%20knead%20it%20is%20to%20lift%20it%20with%20a%20dough%20scraper%20to%20stretch%20the%20gluten%20and%20distribute%20the%20yeast:%3C/p%3E%3Cp%3EDo%20this%20for%205%20minutes%20until%20the%20dough%20starts%20to%20feel%20smoother%20and%20a%20bit%20more%20elastic.%20Place%20this%20back%20in%20the%20mixing%20bowl:%3C/p%3E%3Cp%3EAnd%20cover%20with%20a%20damp%20tea%20towel.%20Place%20in%20a%20warm%20place%20and%20allow%20to%20double%20in%20size.%20This%20should%20take%201%20hour%20but%20given%20the%20enriched%20nature%20of%20the%20dough%20it%20may%20take%201%201/2%20hours:%3C/p%3E%3Cp%3ETip%20the%20dough%20out%20on%20a%20floured%20work%20surface%20and%20punch%20the%20dough%20to%20knock%20it%20back.%20Knead%20into%20a%20log%20and%20slice%20off%2014%20pieces%20of%20equal%20size.%20Shape%20the%20buns%20into%20round%20balls%20and%20carefully%20place%20them%20on%20a%20large%20baking%20tray%20on%20some%20parchment%20paper.%20Cover%20with%20a%20damp%20tea%20towel%20and%20allow%20to%20prove%20and%20double%20in%20size%20again%20in%20a%20warm%20room/cupboard.%20This%20should%20take%2020-30%20minutes.%20Preheat%20the%20oven%20to%20200%20C%20while%20the%20buns%20are%20proving%3C/p%3E%3Cp%3EFinally,%20lightly%20glaze%20each%20bun%20with%20a%20little%20beaten%20egg%20and%20bake%20on%20the%20upper%20shelf%20of%20the%20oven%20for%2020-25%20minutes.%3C/p%3E%3Cp%3EAllow%20to%20cool%20on%20a%20wire%20rack%20before%20lightly%20whipping%20300ml%20whipping%20cream%20with%201%20tsp%20vanilla%20extract%20and%202%20tbsp%20caster%20sugar.%20Slice%20the%20bun%20in%20half,%20then%20place%20thin%20slices%20of%20marzipan%20on%20the%20bottom%20of%20each%20bun.%20Spoon%20or%20pipe%20the%20whipped%20cream%20on%20top%20of%20the%20marzipan%20and%20carefully%20place%20the%20bun%20'hat'%20on%20top.%20I%20defy%20you%20not%20to%20get%20vanilla%20cream%20all%20over%20your%20face!%3C/p%3E){kind=link}
