%20for%20a%20while%20now.%20It's%20one%20that%20I%20picked%20up%20one%20time%20when%20we%20were%20visiting%20a%20National%20Trust%20Place.%20It's%20called%20good%20old-fashioned%3C/p%3E%3Cp%3Ecakes,%20by%20Jane%20Pettigrew%3C/p%3E%3Cp%3EI%20love%20to%20browse%20through%20the%20books%20in%20the%20Shop%20every%20time%20we%20go%20to%20National%20Trust%20places%20and%20inevitably%20I%20end%20up%20bringing%20one%20home%20with%20me%20more%20often%20than%20not!%20They're%20usually%20really%20good%20books,%20filled%20with%20traditional%20and%20historical%20recipes.%3C/p%3E%3Cp%3EThis%20one%20contains%20more%20than%2060%20recipes%20for%20cakes%20and%20tarts,%20from%20rich%20fruit%20cakes%20to%20chocolate%20cakes%20to%20flans%20and%20everything%20in%20between.%3C/p%3E%3Cp%3EIncluded%20as%20well%20are%20traditional%20teatime%20favourites%20such%20as%20Maids%20of%20Honour%20and%20Seed%20Cake,%20and%20this%20lovely%20little%20cake%20you%20see%20here%20today.%3C/p%3E%3Cp%3EFeatherlight%20Wholewheat%20Cake.%20I%20thought%20it%20would%20be%20wholesome%20and%20a%20bit%20different%20than%20our%20usual%20fare.%20I%20was%20right.%20It%20is%20wholesome%20and%20yet%20at%20the%20same%20time%20very%20light%20and%20incredibly%20moist%20as%20well!!%20That%20must%20be%20because%20of%20the%20brown%20sugar.%20That%20always%20produces%20a%20cake%20with%20a%20moist%20crumb.%3C/p%3E%3Cp%3EIt%20has%20a%20delicious%20cream%20cheese%20filling%20and%20frosting,%20which%20is%20just%20stogged%20full%20of%20toasted%20walnut%20bits.%20Garnished%20with%20whole%20walnuts,%20it%20makes%20a%20really%20pretty%20cake%20for%20your%20teatime%20table.%3C/p%3E%3Cp%3EThe%20layer%20of%20jam%20is%20my%20own%20addition.%20I%20used%20a%20seedless%20raspberry%20jam%20.%20.%20.%20because%20I%20like%20jam%20and%20I%20especially%20like%20jam%20in%20the%20middle%20of%20cakes.%20'Nuff%20said!%3C/p%3E%3Cp%3ESome%20other%20offerings%20in%20the%20book%20are:%2017th%20Century%20Honey%20Cake,%20Banana%20and%20Pineapple%20Cake,%20Boiled%20Whiskey%20Cake,%20Dorothy%20Wordsworth's%20Favourite%20Cake,%20Coffee%20and%20Drambuie%20Meringues,%20Paradise%20Slice,%20Norfo%20Tart,%20Kentish%20Pudding%20Pies%20.%20.%20.%20to%20name%20just%20a%20few.%3C/p%3E%3Cp%3EI%20have%20to%20say%20I%20love%20exploring%20the%20traditional%20recipes%20of%20the%20UK.%20Not%20only%20is%20it%20interesting,%20but%20it's%20also%20a%20rather%20scrummy%20pastime%20as%20well!%3C/p%3E%3Cp%3E*Featherlight%20Wholewheat%20Cake*%3C/p%3E%3Cp%3EMakes%20one%207%20inch%20two-layer%20cake%3C/p%3E%3Cp%3EThis%20is%20only%20a%20small%20cake,%20just%20perfect%20for%20a%20tea%20party.%20With%20the%20icing%20having%20been%20made%20with%20cream%20cheese,%3C/p%3E%3Cp%3Eit%20is%20best%20eaten%20on%20the%20day.%20Store%20any%20leftovers%20in%20the%20refrigerator.%3C/p%3E%3Cp%3EFor%20the%20cake:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20180*C/350*F/%20gas%20mark%204.%20Butter%20two%207%20inch%20round%20sandwich%20tins%20and%20line%20the%20bottoms%20with%20baking%20paper.%20Butter%20the%20paper.%20Set%20aside.%3C/p%3E%3Cp%3ECream%20together%20the%20butter%20and%20sugar%20until%20light%20and%20fluffy.%20Beat%20together%20the%20eggs%20yolks%20and%20water.%20Beat%20into%20the%20creamed%20mixture,%20beating%20it%20in%20hard.%20Fold%20in%20the%20flour.%20Whisk%20the%20egg%20whites%20until%20stiff.%20Fold%20in.%20Divide%20the%20mixture%20equally%20amongst%20the%20prepared%20tins.%20Bake%20for%2020%20to%2025%20minutes.%3C/p%3E%3Cp%3ETurn%20out%20onto%20a%20wire%20rack%20to%20cool%20completely.%3C/p%3E%3Cp%3EBeat%20together%20the%20ingredients%20for%20the%20filling%20until%20light%20and%20fluffy.%20When%20the%20cake%20is%20completely%20cold,%20place%20one%20layer,%20right%20side%20up%20on%20a%20plate.%20Spread%20with%20half%20of%20the%20filling.%20Top%20with%20the%20other%20cake,%20right%20side%20up%20and%20ice%20with%20the%20remaining%20icing.%20Decorate%20with%20half%20walnuts.%20Cut%20into%20wedges%20to%20serve.%3C/p%3E%3Cp%3ENote:%20I%20added%20a%20layer%20of%20seedless%20raspberry%20jam%20on%20the%20bottom%20layer%20before%20I%20put%20on%20the%20walnut%20cream%20cheese%20filling.%20Fabulous%20addition!%3C/p%3E){kind=link}
