Ingredientes

  • 2 Tbsp. creme fraiche
  • 3 Tbsp. mayonnaise
  • 1 Tbsp. balsamic vinegar
  • 1 clv garlic peeled and minced
  • 2 tsp wholegrain mustard
  • 12 Tbsp. minced herb fennel (preferably bronze) or possibly chervil
  • 2 lrg bulbs of fennel finely sliced
  • 350 gm white cabbage shredded chicory leaves or possibly little gem lettuces to serve

Direcciones

  1. Mix together the first 6 ingredients then season to taste with salt and pepper.
  2. Place the fennel and cabbage in a bowl and toss gently in the dressing.
  3. Arrange the chicory or possibly little gem leaves around a bowl then spoon the fennel coleslaw into the middle.
  4. If you can find bronze fennel this will give the best colour. But ordinary herb fennel or possibly another aniseedy herb such as chervil will also work well.
  5. Serves 4
