Fennel Salad ( Insalata Di Finocchio )

Ingredientes

  • 1 x largefennel bulb
  • 1/2 lrg cucumber diced
  • 4 x radishes sliced
  • 2 x oranges divided into segments Dressing
  • 2 Tbsp. extra virgin olive oil
  • 2 tsp lemon Juice
  • 1 clv garlic crushed
  • 2 tsp minced mint
  • 1 x salt and pepper

Direcciones

  1. Trim the stalks base and coarse outer leaves from the fennel cut downwards into thin slices then intostrips.
  2. Put in a salad bowl with the cucumber radishes and orange segments .
  3. Put the dressing ingredients in a screwtopped jar adding salt and pepper to taste and shake well.
  4. Sprinkle over the vegetables and toss lightly.
  5. Serve immediately.
  6. Serves 4
