,%20so%20I%20figure%20I%20might%20as%20well%20enjoy%20and%20share%20as%20much%20of%20the%20Golden%20State%20as%20I%20can!%20Fiesta%20is%20a%20truly%20unique%20Santa%20Barbara%20tradition.%20Officially%2090%20years%20strong%20as%20of%20this%20Wednesday.%20It%E2%80%99s%20a%20unique%20blend%20of%20culture,%20history,%20food,%20music,%20dance%20and%20booze.%20Basically%20the%20world%E2%80%99s%20best%20combination%20in%20my%20opinion.%20This%20week%20I%E2%80%99m%20going%20to%20share%20some%20of%20my%20favorite,%20both%20new%20and%20old,%20Mexican%20inspired%20recipes.%3C/p%3E%3Cp%3EI%20love%20this%20salad!%20It%E2%80%99s%20fast%20and%20easy.%20Light%20and%20fresh.%20And%20it%20makes%20a%20perfect%20alternative%20side%20dish%20to%20a%20Mexican%20meal%20instead%20of%20traditional%20black%20or%20pinto%20bean%20dishes.%20I%20had%20originally%20planned%20on%20serving%20this%20as%20a%20side%20dish%20with%20tequila%20lime%20chicken,%20but%20I%20was%20so%20hungry%20for%20lunch%20that%20I%20decided%20to%20skip%20the%20rest%20of%20the%20meal%20and%20just%20dig%20in.%20Excellent%20decision.%20If%20you%20wanted%20to%20add%20some%20more%20bulk%20to%20the%20salad,%20some%20chopped%20romaine%20would%20be%20great.%20If%20I%20had%20some%20cilantro%20on%20hand%20(my%20plants%20have%20refused%20to%20last%20longer%20than%205%20days%20this%20summer!)%20or%20corn%20kernels%20(I%20can%E2%80%99t%20eat%20whole%20corn,%20but%20if%20you%20can),%20I%20know%20both%20would%20have%20made%20the%20best%20addition.%3C/p%3E%3Cp%3EFiesta%20Bean%20Salad%3C/p%3E%3Cp%3EAdapted%20from%20Skinnytaste.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20the%20garlic,%20lime%20juice,%20oil,%20cumin,%20crushed%20red%20pepper,%20and%20salt.%3C/p%3E%3Cp%3EAdd%20the%20black%20beans,%20chickpeas,%20tomato,%20onion%20and%20jicama.%20When%20ready%20to%20eat,%20gently%20mix%20in%20avocado,%20sprinkle%20with%20queso%20fresco%20and%20serve%20right%20away.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
