%20that%20I%20put%20up%20when%20my%20family%20was%20growing%20up.%20%20%20I'd%20be%20a%20very%20rich%20woman.%20%20I%20used%20to%20put%20up%20tons%20of%20fruits%20and%20vegetables%20every%20year%20.%20.%20.%20%20jams%20and%20jellies,%20pickles%20and%20relishes%20.%20.%20.%20%20chutneys%20and%20fruit%20butters.%20%20%20Dill%20pickles%20were%20always%20a%20favourite%20along%20with%20green%20tomato%20chow%20.%20.%20.%20%20but%20I%20don't%20mind%20admitting%20my%20favourite%20of%20it%20all%20were%20the%20pickled%20beetroot.%20%20I%20LOVE%20PICKLED%20BEETROOT!%3C/p%3E%3Cp%3EOf%20course%20with%20there%20just%20being%20two%20of%20us%20in%20the%20house%20now,%20its%20just%20not%20practical%20these%20days%20to%20do%20all%20that%20preserving,%20but%20I%20do%20get%20a%20hankering%20from%20time%20to%20time%20for%20some%20home%20pickled%20beetroot.%20%20%20Oh,%20I%20know%20I%20can%20buy%20it%20in%20the%20shops%20.%20.%20.%20%20but%20it's%20just%20not%20the%20same.%3C/p%3E%3Cp%3EI%20love,%20LOVE%20this%20recipe%20because%20you%20end%20up%20with%20just%20one%20jar%20of%20lovely%20pickled%20beets%20.%20.%20.%20%20and%20you%20start%20off%20by%20roasting%20them.%20%20%20Did%20you%20know%20%20that%20roasting%20beetroot%20enhances%20this%20lovely%20vegetables%20natural%20sweetness?%20%20It%20does%20.%20.%20.%20%20I%20love%20roasted%20beetroot.%3C/p%3E%3Cp%3EThe%20brine%20for%20these%20is%20a%20simple%20one%20%20.%20.%20.%20%20red%20wine%20vinegar,%20sugar%20and%20water%20flavoured%20with%20salt,%20cinnamon,%20cloves,%20peppercorns,%20star%20anise%20and%20a%20goodly%20pinch%20of%20crushed%20red%20chillies%20.%20.%20.%20%20depending%20on%20how%20much%20fire%20you%20want%20in%20your%20ice.%20%20%20I%20prefer%20less,%20but%20if%20you%20like%20spicy%20things%20you%20can%20certainly%20add%20more.%3C/p%3E%3Cp%3EBeautiful%20on%20their%20own%20with%20grilled%20meats%20and%20fish%20%20.%20.%20.%20%20or%20in%20sandwiches,%20or%20%20(my%20personal%20favourite)%20in%20lovely%20salads%20with%20goats%20cheese%20and%20plenty%20of%20salad%20greens!%20%20Mmmmm%20.%20.%20.%20%20so%20good.%20%20%20I%20just%20adore%20these.%3C/p%3E%3Cp%3E*Fire%20and%20Ice%20Roasted%20Pickled%20Beetroot*%3C/p%3E%3Cp%3EMakes%20one%20pint%20jar%3C/p%3E%3Cp%3EThese%3C/p%3E%3Cp%3Eare%20a%20delicious%20mix%20of%20sweet,%20sour%20and%20hot.%20%20You%20can%20control%20the%20heat%3C/p%3E%3Cp%3Eby%20the%20amount%20of%20chili%20flakes%20you%20add.%20%20These%20need%20to%20pickle%20in%20the%3C/p%3E%3Cp%3Erefrigerator%20for%203%20to%205%20days%20before%20using.%3C/p%3E%3Cp%3Ejar.%20Screw%20on%20the%20lid.%20%20%20Allow%20to%20come%20to%20room%20temperature%20and%20then%3C/p%3E%3Cp%3Erefrigerate%20for%203%20to%205%20days%20before%20using.%20%20%20Delicious.%3C/p%3E){kind=link}
