Fish Florentine With Cheese Sauce

Ingredientes

  • 1 1/2 lb small fish fillets salt and white pepper, TO TASTE
  • 1/2 c. dry white wine or possibly fish broth
  • 2 Tbsp. lemon juice
  • 1 1/2 lb spinach, leaves only
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 tsp Dijon mustard
  • 1/3 c. whipping cream
  • 1 c. shredded Swiss Cheese
  • 1 dsh nutmeg

Direcciones

  1. Sprinkle fish with salt and pepper. Fold fillets in halves and arrange in single layer in a baking dish. Pour in wine and lemon juice. Cover.
  2. Bake at 400 degrees just till fish is opaque, about 10 min. Remove fish with slotted spatula; drain. Measure cooking liquid; add in water if necessary to make 1 c..
  3. Steam spinach in moisture which's clinging to them, stirring occasionally, just till wilted, 3 - 5 min. Drain well, chop coarsely. Spread spinach in a buttered 2-quart. baking dish. Arrange fish over spinach.
  4. Heat butter in a saucepan. Fold in flour and nutmeg. Cook till bubbly.
  5. Remove from heat, blend in mustard. Gradually add in fish liquid and cream.
  6. Return to medium heat. Cook, stirring till thick. Stir in 1/2 c. cheese. Salt to taste. Spoon sauce over fish. Sprinkle with remaining cheese. Bake, uncovered, at 450 degrees till sauce bubbles, 8 - 10 min.
