%20But%20you%20know,%20being%20late%20with%20a%20Flashback%20Friday%20post%20is%20really%20kind%20of%20staying%20with%20the%20theme.%20Wait%20long%20enough%20to%20post%20something%20and%20it%20becomes%20a%20flashback!%20And%20you%20get%20a%20lot%20of%20mileage%20out%20of%20a%20meal%20that%20way%20too.%20Take%20for%20instance%20these%20Blackeyed%20Peas%20we%20had%20to%20ring%20in%20the%20new%20year.%3C/p%3E%3Cp%3EFor%20those%20of%20you%20that%20aren't%20aware,%20Blackeyed%20Peas%20are%20supposed%20to%20bring%20you%20luck%20for%20the%20coming%20year%20and%20when%20accompanied%20by%20greens..which%20they%20were,%20you%20are%20supposed%20to%20have%20plenty%20of%20money%20as%20well.%20Lets%20hope%20that%20one%20rings%20true.%20But%20even%20if%20its%20not,%20it%20was%20a%20yummy%20way%20to%20start%202011.%20I%20did%20something%20a%20little%20different%20this%20time%20with%20my%20black%20eyed%20peas.%20I%20didn't%20have%20any%20ham%20or%20smoked%20meat%20other%20than%20bacon,%20so%20used%20that%20and%20it%20was%20awesome.%20Great%20smoky%20flavor!%3C/p%3E%3Cp%3EBlack%20Eyed%20Peas%3C/p%3E%3Cp%3E1%20pound%20dry%20black%20eyed%20peas%3C/p%3E%3Cp%3E1/2%20pound%20bacon,%20chopped%20in%20small%20pieces%3C/p%3E%3Cp%3E1%20onion,%20chopped%3C/p%3E%3Cp%3E1%20bell%20pepper,%20chopped%3C/p%3E%3Cp%3E1%20Tbls%20minced%20garlic%3C/p%3E%3Cp%3E1%20small%20can%20green%20chiles%3C/p%3E%3Cp%3EGarlic%20Salt,%20Tony%20Chachere's%20Creole%20seasoning,%20onion%20powder%20to%20taste%3C/p%3E%3Cp%3EWater%3C/p%3E%3Cp%3EPut%20peas%20on%20a%20large%20pot%20and%20cover%20with%20water.%20Bring%20to%20boil,%20turn%20off%20fire%20and%20let%20soak%20for%20an%20hour.%20Drain%20peas%20in%20colander.%20In%20same%20pot%20cook%20bacon%20until%20just%20getting%20crisp.%20Remove%20bacon%20and%20drain%20all%20but%20a%20tablespoon%20of%20bacon%20fat.%20Cook%20onions,%20peppers%20and%20garlic%20in%20fat%20until%20begins%20to%20soften.%20Add%20beans,%20bacon%20and%20chiles%20back%20into%20pot%20and%20add%20water%20to%20cover%20by%20an%20inch%20or%20two.%20Season%20to%20taste%20and%20simmer%20for%20a%20couple%20of%20hours%20keeping%20an%20eye%20on%20water%20level.%20I%20like%20my%20beans%20to%20be%20thick..not%20watery%20so%20I%20cook%20mine%20for%20a%20long%20time%20and%20let%20the%20water%20absorb.%20Check%20seasoning%20before%20serving%20and%20adjust%20to%20taste.%20Serve%20over%20rice.%20Also%20VERY%20good%20eaten%20with%20crumbled%20fritos...but%20thats%20just%20me.%3C/p%3E%3Cp%3ENext%20stop%20for%20this%20meal....I%20used%20the%20left%20over%20rice%20from%20our%20meal%20to%20make%20rice%20pudding.%20Love%20it%20:-)%20I%20was%20running%20low%20on%20raisins,%20so%20used%20dried%20cherries%20instead.%20Good%20substitute!%3C/p%3E%3Cp%3ELast%20stop%20for%20the%20New%20Years%20blackeyed%20peas...Soup!%20I%20took%20what%20was%20left%20of%20the%20peas%20-%20after%20a%20couple%20of%20days%20of%20leftovers%20and%20turned%20it%20into%20another%20full%20meal,%20part%20of%20which%20went%20into%20the%20freezer%20to%20live%20yet%20another%20day...so%20maybe%20I%20should%20say%20this%20was%20the%20second%20to%20last%20stop!%3C/p%3E%3Cp%3EBlackeyed%20Pea%20and%20Greens%20Soup%3C/p%3E%3Cp%3ESeasoning%20to%20taste%3C/p%3E%3Cp%3ECombine%20all%20and%20heat%20for%20about%2030%20minutes.%20If%20your%20beans%20were%20in%20a%20lot%20of%20liquid%20you%20may%20want%20to%20puree%20some%20of%20the%20soup%20to%20make%20more%20creamy.%20Mine%20was%20already%20creamy%20so%20I%20didn't%20need%20to.%20I%20really%20didn't%20have%20to%20add%20anything%20else%20since%20it%20was%20already%20well%20seasoned%20and%20had%20onions,%20bell%20peppers%20and%20garlic%20in%20the%20beans%20but%20if%20you%20start%20with%20canned%20you%20may%20want%20to%20add%20these.%3C/p%3E%3Cp%3EHow%20about%20a%20July%20bloom%20to%20roundout%20the%20flashback?%3C/p%3E%3Cp%3EIf%20you%20have%20a%20Flashback%20of%20any%20kind%20to%20share%20add%20your%20link%20here%3C/p%3E%3Cp%3EI'm%20joining%20in%20with%20Foodie%20Friday%20this%20week%20over%20at%20Designs%20by%20Gollum.%20Check%20out%20the%20other%20posts%20HERE%3C/p%3E%3Cp%3EAnd%20over%20at%20Tidy%20Mom's%20for%20I'm%20Lovin'%20it%20Fridays.%20Click%20on%20the%20icon%20below%20to%20go%20there.%3C/p%3E){kind=link}
