.%20So,%20Will%20and%20I%20traveled%20up%20to%20the%20Bay%20Area%20to%20join%20in%20the%20celebratory%20weekend.%3C/p%3E%3Cp%3EFor%20the%20double%20birthday,%20we%20went%20to%20lunch%20at%20the%20North%20Beach%20Restaurant%20in%20San%20Francisco.%20This%20restaurant%20is%20in%20the%20heart%20of%20North%20Beach%20(the%20Italian%20district).%20The%20food%20was%20wonderful,%20and%20it%20was%20like%20being%20at%20home,%20with%20the%20long%20tables%20and%20casual%20atmosphere.%20After%20our%20meal,%20some%20of%20us%20went%20downstairs%20to%20their%20rooms%20of%20prosciutto.%20Oh.%20My.%20Goodness.%20That%20is%20my%20kind%20of%20place.%20On%20the%20other%20side%20of%20the%20wall%20from%20their%20wine%20cellar%20(which%20had%20more%20wine%20than%20I%20have%20ever%20seen%20in%20my%20life),%20they%20had%20two%20rooms%20from%20whose%20ceilings%20dangled%20more%20prosciutto%20than%20our%20family%20would%20ever%20be%20able%20to%20eat%20in%20a%20lifetime%20(and%20we%20can%20put%20away%20a%20lot%20of%20prosciutto).%20Too%20bad%20we%20couldn%E2%80%99t%20take%20one%20home%E2%80%A6%3C/p%3E%3Cp%3EAnyway,%20since%20then%20I%E2%80%99ve%20been%20thinking%20about%20my%20favorite%20recipes%20that%20use%20prosciutto.%20To%20be%20honest,%20there%20are%20a%20lot.%20One%20of%20my%20favorites,%20that%20I%E2%80%99m%20surprised%20I%20haven%E2%80%99t%20shared%20yet,%20is%20Prosciutto%20&%20Pea%20Risotto.%20It%20is%20one%20of%20my%20go-to%20recipes%20when%20we%20make%20last%20minute%20plans%20with%20company%20or%20a%20friend%20is%20stopping%20by%20on%20their%20way%20through%20town.%20%20You%20may%20be%20thinking%20prosciutto%20and%20peas?%20Together?%20But,%20seriously,%20they%20compliment%20each%20other%20so%20nicely,%20and%20the%20creaminess%20of%20the%20risotto%20makes%20it%20a%20heavenly%20combination.%20I%20hope%20you%20enjoy%20it%20as%20much%20as%20Will%20and%20I%20do!%3C/p%3E%3Cp%3EProsciutto%20&%20Pea%20Risotto%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EBring%20broth%20to%20a%20simmer%20in%20a%20saucepan.%20Heat%20butter%20and%20olive%20oil%20in%20a%20large%20pot%20over%20medium-low%20heat.%20Once%20butter%20is%20melted,%20add%20chopped%20onions.%20Saut%C3%A9%20until%20onions%20are%20translucent%20and%20soft.%20Add%20arborio%20rice,%20stir%20to%20coat%20with%20oil,%20and%20cook%20until%20grains%20start%20to%20%E2%80%9Cpop,%E2%80%9D%20approximately%202%20minutes.%20Add%20white%20wine.%20Once%20wine%20cooks%20down,%20add%20broth%20one%201/2%20cup%20at%20a%20time,%20allowing%20rice%20to%20soak%20up%20the%20broth%20before%20adding%20more.%20Continue%20stirring%20and%20adding%20broth%20until%20rice%20is%20cooked%20and%20creamy.%20A%20good%20indication%20that%20the%20rice%20is%20ready%20is%20when%20a%20wooden%20spoon%20can%20stand%20straight%20up%20in%20the%20rice.%20Stir%20in%20peas,%20allowing%20to%20cook%20for%20an%20additional%202%20minutes.%20Add%20Parmesan%20cheese,%20stirring%20constantly.%20Once%20Parmesan%20has%20been%20completely%20incorporated,%20take%20the%20pot%20off%20the%20burner%20and%20stir%20in%20prosciutto.%20Serve%20and%20enjoy!%3C/p%3E){kind=link}
