.%20If%20you%20are%20like%20us,%20you%20probably%20eat%20a%20little%20lighter%20as%20well%20during%20this%20time%20of%20year.%3C/p%3E%3Cp%3EOne%20night%20a%20couple%20weeks%20ago,%20I%20was%20feeling%20particularly%20unmotivated%20to%20make%20dinner,%20and%20I%20was%20staring%20into%20the%20fridge%20as%20if%20it%20would%20spontaneously%20tell%20me%20what%20to%20make.%20I%20had%20a%20container%20of%20ricotta%20cheese%20that%20I%20needed%20to%20use%20that%20week%20before%20it%20passed%20its%20expiration%20date,%20and%20I%20was%20determined%20to%20use%20it%20in%20some%20way.%20Most%20of%20the%20recipes%20I%20have%20call%20for%20baking%20the%20ricotta%20with%20pasta,%20but%20ricotta%20is%20just%20as%20delicious%20%E2%80%9Craw.%E2%80%9D%20I%20had%20just%20been%20to%20the%20farmers%E2%80%99%20market%20and%20had%20bought%20a%20baguette%20from%20a%20local%20bakery%20and%20some%20perfectly%20ripe%20heirloom%20tomatoes.%20We%20decided%20to%20make%20a%20bruschetta%20of%20sorts%20with%20the%20ricotta,%20ripe%20tomatoes,%20and%20some%20basil%20growing%20on%20our%20balcony.%20It%20needed%20hardly%20any%20seasoning,%20just%20a%20dash%20of%20salt%20and%20pepper,%20because%20the%20tomatoes%20and%20basil%20were%20so%20flavorful%20against%20the%20ricotta.%20We%20ended%20up%20eating%20this%20as%20our%20meal,%20but%20I%20am%20looking%20forward%20to%20making%20it%20as%20an%20appetizer%20the%20next%20time%20we%20have%20friends%20over%20for%20dinner.%20Give%20it%20a%20try.%20I%20would%20love%20to%20know%20what%20you%20think!%3C/p%3E%3Cp%3ERicotta,%20Tomatoes,%20&%20Basil%20Bruschetta%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1%20baguette,%20thinly%20sliced%20and%20toasted%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ESpoon%20the%20ricotta%20into%20a%20large%20bowl.%20Add%20the%20diced%20tomatoes%20and%20julienned%20basil.%20Add%20salt%20and%20pepper%20to%20taste.%20Spread%20evenly%20over%20toasted%20bread.%20Serve%20and%20enjoy!%3C/p%3E){kind=link}
