%20and%20have%20an%20eight%20month%20old%20boy.%20He%20keeps%20me%20on%20my%20toes!%3C/p%3E%3Cp%3EI%20love%20to%20bake%20and%20cook.%20.%20.%20love%20everything%20food.%20I%20am%20a%20graduate%20of%20The%20Art%20Institute%20of%20Houston's%20International%20School%20of%20Culinary%20Arts%20and%20have%20worked%20in%20restaurants,%20specialty%20food%20stores%20and%20bakeries.%20I've%20taken%20a%20sabbatical%20from%20the%20food%20industry%20and%20am%20staying%20home%20to%20raise%20my%20son.%20My%20food%20blog%20is%20my%20outlet%20to%20the%20culinary%20world.%20Being%20that%20my%20time%20is%20limited%20having%20a%20new%20baby%20(he%20is%20a%20very%20intense%20little%20baby).%20.%20.%20it%20takes%20me%20forever%20to%20get%20a%20post%20out.%20I%20try%20to%20post%20at%20least%20twice%20a%20month.%3C/p%3E%3Cp%3EMelissa%20with%20that%20kind%20of%20a%20culinary%20background%20I%20should%20be%20your%20adopted%20blogger!!%20Please%20go%20visit%20Melissa%20and%20spread%20the%20blogger%20love,%20she%20absolutely%20deserves%20it!%20Her%20blog%20is%20filled%20with%20wonderful%20recipes%20that%20you'll%20absolutely%20love.%20She%20makes%20me%20proud%20to%20be%20an%20adopt%20a%20blogger%20mamma!%3C/p%3E%3Cp%3EFlourless%20Peanut%20Butter%20Sandwich%20Cookies%3C/p%3E%3Cp%3EDoes%20this%20every%20happen%20to%20you....%20you%20have%20an%20idea%20in%20your%20head%20of%20what%20you%20want%20something%20to%20be%20like,%20in%20my%20case%20peanut%20butter%20cookies.%20I%20wanted%20a%20soft%20peanut%20butter%20cookie,%20a%20cookie%20like%20the%20Archway%20cookies%20I%20bought%20years%20ago.%20I've%20been%20searching%20and%20trying%20recipes%20to%20try%20and%20create%20something%20that%20would%20come%20close%20to%20that%20cookie%20for%20awhile%20now.%20After%20trying%20lots%20of%20flour%20cookies%20a%20light%20bulb%20went%20on%20in%20my%20scary%20little%20head,....flourless%20cookies.%20I%20loved%20the%20flourless%20chocolate%20souffle%20cake%20I%20made,%20I%20needed%20to%20at%20least%20try%20this%20concept.%20I%20went%20on%20a%20search%20that%20yielded%20many%20flourless%20peanut%20butter%20cookie%20recipes,%20but%20fell%20in%20love%20with%20this%20one%20from%20Fine%20Cooking.%20Oh%20yes%20this%20cookie%20is%20good!%20My%20taste%20tasters%20at%20work%20loved%20this%20cookie!!%20It%20was%20peanut%20buttery%20with%20just%20the%20right%20amount%20of%20chocolate%20in%20between.%20After%20the%20staff%20had%20their%20taste%20I%20told%20them%20they%20were%20flourless.%20What???%20This%20tender%20melt%20in%20your%20mouth%20cookie%20is%20flourless??%20I%20even%20had%20a%20customer%20ask%20me%20if%20I%20was%20going%20to%20make%20them%20for%20the%20restaurant.%20The%20chocolate%20filling%20recipe%20makes%20a%20lot%20of%20filling,%20I%20had%20tons%20left%20over,%20next%20time%20I'll%20half%20the%20recipe.%20Other%20than%20that,%20this%20is%20the%20perfect%20peanut%20butter%20sandwich%20cookie!!%3C/p%3E%3Cp%3EFlourless%20Peanut%20Butter%20Sandwich%20Cookies%3C/p%3E%3Cp%3EFine%20Cooking%3C/p%3E%3Cp%3EIngredients;%3C/p%3E%3Cp%3ETip:%3C/p%3E%3Cp%3ESubstitute%20semisweet%20chocolate%20for%20the%20bittersweet%20in%20the%20filling%20for%20a%20sweeter%20kick.%3C/p%3E%3Cp%3EMake%20the%20cookies:%3C/p%3E%3Cp%3EPosition%20a%20rack%20in%20the%20center%20of%20the%20oven%20and%20heat%20the%20oven%20to%20350%C2%BAF.%20Line%20four%20cookie%20sheets%20with%20parchment%20or%20nonstick%20baking%20liners.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer%20fitted%20with%20the%20paddle%20attachment%20(or%20in%20a%20large%20mixing%20bowl%20with%20a%20hand%20mixer),%20beat%20the%20peanut%20butter,%20brown%20sugar,%20and%20baking%20soda%20on%20medium%20speed%20until%20well%20blended,%20about%201%20minute.%20Add%20the%20eggs%20and%20vanilla%20and%20mix%20on%20low%20speed%20until%20just%20blended,%20about%2025%20seconds.%3C/p%3E%3Cp%3EShape%20level%20tablespoonfuls%20of%20the%20dough%20into%20balls%20about%201%20inch%20in%20diameter.%20Arrange%20the%20balls%201-1/2%20inches%20apart%20on%20the%20prepared%20baking%20sheets.%20Do%20not%20press%20down.%20Bake%20one%20sheet%20at%20a%20time%20until%20the%20cookies%20are%20puffed%20and%20crackled%20but%20still%20moist-looking,%20about%2011%20minutes.%20Transfer%20the%20cookie%20sheet%20to%20a%20rack%20to%20cool%20about%2010%20minutes.%20Using%20a%20spatula,%20move%20the%20cookies%20to%20the%20rack%20and%20let%20cool%20completely.%20Repeat%20with%20the%20remaining%20cookies.%3C/p%3E%3Cp%3EMake%20the%20filling:%3C/p%3E%3Cp%3EMelt%20the%20chocolate%20and%20the%20butter%20in%20the%20microwave%20or%20in%20a%20medium%20heatproof%20bowl%20set%20in%20a%20skillet%20with%201%20inch%20of%20barely%20simmering%20water,%20stirring%20with%20a%20rubber%20spatula%20until%20smooth.%20Remove%20from%20the%20heat%20and%20set%20aside%20until%20cool%20and%20slightly%20thickened,%2020%20to%2030%20minutes.%3C/p%3E%3Cp%3EAssemble%20the%20sandwiches:%3C/p%3E%3Cp%3ETurn%20half%20of%20the%20cooled%20cookies%20over%20so%20they%20are%20flat%20side%20up.%20Spoon%202%20tsp.%20of%20the%20chocolate%20filling%20onto%20the%20center%20of%20each%20cookie.%20Top%20with%20the%20remaining%20cookies,%20flat%20side%20down.%20Press%20gently%20on%20each%20cookie%20to%20spread%20the%20filling%20almost%20to%20the%20edge.%20Set%20on%20the%20rack%20until%20the%20filling%20is%20firm,%2020%20to%2030%20minutes.%3C/p%3E%3Cp%3EMake%20Ahead%20Tips:%3C/p%3E%3Cp%3EThe%20balls%20of%20dough%20may%20be%20frozen%20before%20baking%20for%201%20month.%20Thaw%20them%20overnight%20in%20the%20refrigerator%20before%20proceeding%20with%20the%20recipe.%3C/p%3E){kind=link}
