.%20%20As%20I%20pulled%20the%20chicken%20out,%20I%20thought%20I%20was%20going%20to%20make%20a%20simple%20creamy%20garlicy%20herby%20sauce%20(again.%20and%20I%20was%20not%20thrilled%20with%20the%20idea)%20but%20as%20I%20started%20the%20process,%20and%20began%20looking%20through%20my%20fridge...it%20evolved%20into%20something%20completely%20different.%3C/p%3E%3Cp%3EAnd%20new.%3C/p%3E%3Cp%3EThe%20results%20were...well....yummy.%20I've%20been%20informed%20that%20I%20need%20to%20make%20more%20%22pantry%22%20meals.%20Probably%20one%20of%20the%20best%20compliments%20I've%20received%20in%20a%20long%20time.%3C/p%3E%3Cp%3ESo%20here%20I%20sit....writing%20down%20this%20recipe%20before%20I%20forgot%20what%20the%20hell%20I%20did...but%20I%20couldn't%20think%20of%20a%20name.%20My%20daughter%20gave%20me%20some%20strange%20(only%20a%20teenager%20could%20understand)%20names.%20I%20suggested%20Chicken%20on%20the%20Fly%20and%20she%20thought%20that%20was%20gross.%3C/p%3E%3Cp%3ELOL...guess%20she's%20not%20all%20too%20familiar%20with%20the%20saying%20%22on%20the%20fly%22...thus%20it%20became%20Flying%20Chicken.%3C/p%3E%3Cp%3EI%20don't%20have%20pictures%20of%20the%20process.%20I%20didn't%20know%20I'd%20be%20adding%20it%20to%20my%20blog,%20but%20here%20I%20am....and%20here%20we%20go....(keep%20in%20mind%20that%20the%20seasoning%20ingredients%20are%20approximate.%20Use%20it%20as%20a%20guide%20and%20do%20with%20it%20as%20you%20wish)%3C/p%3E%3Cp%3ESeason%20the%20chicken%20with%20salt%20and%20pepper%20and%20saute%20in%20olive%20oil%20until%20brown,%20remove%20from%20pan%20and%20set%20aside.%3C/p%3E%3Cp%3EAdd%20mushrooms%20to%20the%20pan%20with%20a%20bit%20more%20olive%20oil%20if%20needed%20and%20saute%20until%20just%20barely%20tender.%20Remove%20from%20pan%20and%20set%20aside%3C/p%3E%3Cp%3EAdd%20garlic%20and%20the%20rest%20of%20the%20seasonings%20and%20saute%20briefly...about%20a%20minute.%3C/p%3E%3Cp%3EPour%20the%20tomatoes%20and%20milk%20into%20the%20pan%20and%20stir%20to%20combine.%3C/p%3E%3Cp%3EWith%20an%20immersion%20blender,%20puree%20the%20tomato%20mixture.%20Because%20my%20pan%20was%20so%20wide,%20I%20had%20to%20remove%20the%20mixture%20to%20a%20tall,%20narrow%20container%20to%20puree%20properly%20without%20making%20a%20huge%20mess.%20Once%20pureed,%20return%20to%20the%20pan%20along%20with%20the%20chicken%20and%20mushrooms.%20If%20needed,%20add%20more%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3EHeat%20and%20simmer%20for%20approximately%2010%20minutes.%3C/p%3E%3Cp%3EServe%20over%20pasta.%3C/p%3E%3Cp%3EPoof....dinner%20is%20served.%3C/p%3E%3Cp%3EIt's%20creamy%20yet%20not%20too%20rich.%20I%20didn't%20want%20anything%20%22Italian%22.%20No%20reason...just%20not%20in%20the%20mood,%20so%20I%20stayed%20away%20from%20the%20Italian%20seasoning%20that%20was%20calling%20to%20me%20from%20the%20spice%20cupboard.%20There's%20a%20slight%20after%20%22bite%22%20to%20it.%20Probably%20from%20the%20paprika....but%20it's%20just%20enough%20to%20catch%20your%20attention.%20Fast,%20easy%20and%20satisfying.%20The%20perfect%20working%20mom's%20weekday%20dinner.%3C/p%3E){kind=link}
