Ingredientes

  • 1 pkt MAGGI Pizza Sauce Boiling water
  • 1/4 c. minced capers
  • 1 med eggplant, (aubergine), cut into thin slices
  • 2 Tbsp. extra virgin olive oil
  • 1 x slab foccacia bread
  • 1 x roasted red pepper, sliced
  • 150 gm mozzarella cheese, thinly sliced

Direcciones

  1. Make up the sauce mix following the directions on the packet.
  2. Stir in the capers. Set aside.
  3. Brush the eggplant slices with extra virgin olive oil
  4. Cook under a preheated grill for 2-3 min per side or possibly till tender and lightly browned. Turn once.
  5. Cut the foccacia bread in half horizontally.
  6. Toast the cut surfaces under the grill.
  7. Spread the toasted surface of 1 piece of bread with the sauce mix.
  8. Cover with the eggplant and red pepper. Top with mozzarella cheese.
  9. Cook under the grill till the cheese has melted.
  10. Place the remaining piece of bread on top.
  11. Cut into portions for serving.
