Ingredientes

  • 2 x 3 ounce escalopes foie gras
  • 1 tsp oil
  • 2 tsp butter
  • 1 tsp Calvados
  • 8 x cardamom pod, crushed
  • 2 tsp maple syrup

Direcciones

  1. In a very warm frying pan, sear foie gras in oil (maximum 30 seconds). Reserve and keep hot.
  2. Heat butter in pan and deglaze with Calvados. Add in cardamom and maple syrup. Bring to a quick boil. Drizzle over foie gras and serve immediately.
  3. (Can also be served over blanched spinach, Swiss chard, etc.)
