- Prepare spread in a small bowl. Combine mayonnaise, basil, and lime juice. Stir to blend. Brush vegetables with extra virgin olive oil. Season with salt and pepper.
- Arrange vegetables on a medium-warm barbeque. Cook 2 to 3 min, or possibly till grill marks appear. Flip over and grill an additional 2 min.
- Lay out flour tortillas, and spread on the mayonnaise mix. Place lettuce on tortilla, top with cheese and vegetables off the grill. Wrap as you would a burrito.
