.%20%20I%20really%20think%20it%E2%80%99s%20difficult%20to%20screw%20up%20anything%20that%20has%20sugar,%20cinnamon%20and%20vanilla,%20but%20I%20also%20thought%20that%20if%20anything%20could,%20it%20would%20be%20some%20kind%20of%20grain%20with%20a%20tail%20(I%20really%20hoped%20that%20that%20part%20of%20the%20description%20was%20an%20exaggeration,%20but%20there%20it%20was%20right%20on%20the%20package%E2%80%94although%20what%20my%20friend%20called%20tails%20are%20technically%20called%20%E2%80%9Cgerm%20rings.%E2%80%9D%20Even%20better%E2%80%A6).%3C/p%3E%3Cp%3EI%E2%80%99ve%20had%20mixed%20success%20with%20about%20five%20rice%20pudding%20recipes%20I%E2%80%99ve%20tried:%20either%20the%20rice%20was%20too%20hard,%20too%20soft,%20not%20sweet%20enough,%20blah%20blah%20blah,%20so%20I%20knew%20I%E2%80%99d%20have%20to%20find%20a%20recipe%20specific%20to%20quinoa,%20since%20I%20wasn%E2%80%99t%20familiar%20with%20its%20texture%20or%20taste.%20%20Surprisingly,%20there%20were%20a%20number%20of%20good%20ones%20out%20there,%20which%20means%20more%20folks%20have%20jumped%20on%20the%20crunchy-almost%20like%20couscous-but-with-a-tail%20bandwagon%20than%20I%20knew%20(can%20you%20tell%20that%20I%20really%20can%E2%80%99t%20get%20over%20that%20tail/germ%20thing??%20I%20mean,%20really.%20It%E2%80%99s%20just%20too%20much%20for%20me).%20%20%20All%20of%20the%20recipes%20I%20found%20online%20said%20that%20the%20quinoa%20needed%20to%20be%20picked%20over%20and%20separated%20out%20and%20washed%20thoroughly%20in%20unicorn%20tears,%20which%20sounded%20way%20more%20complicated%20than%20I%20really%20could%20be%20bothered%20with.%3C/p%3E%3Cp%3ELuckily%20Trader%20Joe%E2%80%99s%20sells%20boxes%20of%20it%20and%20I%E2%80%99m%20going%20to%20hope%20that%20TJ%20did%20all%20of%20the%20hard%20work%20for%20me.%3C/p%3E%3Cp%3ESo%20I%20open%20the%20package%20and%20it%20was%20literally%20like%20putting%20my%20head%20in%20damp%20soil,%20which,%20since%20this%20is%20a%20food%20blog%20and%20all,%20is%20not%20the%20best%20description%20for%20something%20I%E2%80%99m%20trying%20to%20encourage%20you%20to%20make,%20but%20that%E2%80%99s%20what%20came%20to%20mind%20and%20I%E2%80%99m%20all%20about%20honesty%20here%20(wait!%20Perhaps%20I%20should%20cut%20to%20the%20chase%20and%20tell%20you%20now%20that%20it%20turned%20out%20to%20be%20super%20tasty,%20so%20that%20all%20of%20this%20lead%20up%20doesn%E2%80%99t%20have%20you%20swearing%20off%20quinoa%20and%20its%20goodness%20before%20you%20even%20try%20it.%20%20It%20was%20yummy!%20I%20promise!).%20%20Needless%20to%20say%20that%20as%20it%20was%20cooking,%20the%20earthy%20smell%20intensified%20to%20the%20point%20that%20when%20it%20was%20ready%20I%20said%20out%20loud,%20%E2%80%9CI%20really%20don%E2%80%99t%20want%20to%20taste%20this,%E2%80%9D%20and%20had%20an%20internal%20debate%20about%20how%20on%20the%20one%20hand%20I%20really%20enjoy%20this%20blog,%20but%20on%20the%20other,%20I%E2%80%99m%20not%20prepared%20to%20eat%20just%20anything%20for%20the%20sake%20of%20coming%20here%20to%20tell%20you%20about%20it.%20%20But%20my%20New%20Year%E2%80%99s%20resolution%20to%20commit%20myself%20to%20this%20little%20endeavor%20won%20out,%20and%20I%20tasted%20about%20three%20grains.%20%20And%20they%20were%20crunchy.%20But!%20Also%20kind%20of%20bland%20and%20inoffensive%20(again,%20strange%20words%20to%20use%20to%20describe%20food,%20but%20that%20made%20me%20realize%20I%20could%20work%20with%20it).%3C/p%3E%3Cp%3EEven%20though%20I%20knew%20the%20sugar,%20coconut%20milk,%20cinnamon%20and%20vanilla%20mixture%20was%20going%20to%20work,%20I%20really%20didn%E2%80%99t%20expect%20the%20recipe%20to%20turn%20out%20as%20well%20as%20it%20did.%20%20I%20mean,%20I%20had%20to%20walk%20around%20my%20apartment%20for%20a%20good%205%20minutes%20after%20it%20came%20out%20of%20the%20oven%20humming%20the%20theme%20to%20Rocky%20to%20gear%20myself%20up%20to%20taste%20it.%20%20And%20I%E2%80%99m%20really%20happy%20I%20did,%20because%20it%20was%20sweet%20and%20creamy,%20with%20a%20lightness%20that%20made%20it%20more%20appealing%20than%20rice%20pudding,%20which%20I%20love,%20but%20will%20totally%20cheat%20on%20with%20this%20quinoa%20pudding.%20%20I%20actually%20had%20to%20convince%20myself%20to%20move%20away%20from%20the%20pan%20so%20there%E2%80%99d%20be%20some%20left%20for%20pictures.%20%20And,%20it%20was%20even%20better%20the%20next%20day%20when%20all%20the%20flavors%20had%20soaked%20in%20and%20it%20was%20room%20temperature.%3C/p%3E%3Cp%3ESo,%20yeah,%20I%20am%20smitten%20with%20a%20super-grain.%20%20I%20had%20some%20for%20breakfast%20and%20have%20been%20snacking%20on%20it%20as%20I%20type%20this%20up.%20%20If%20I%20weren%E2%80%99t%20going%20out%20to%20dinner,%20I%E2%80%99d%20have%20a%20bit%20more.%20%20I%20almost%20feel%20like%20I%20should%20buy%20it%20a%20card%20and%20some%20flowers%E2%80%A6%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0F.%3C/p%3E%3Cp%3EWhisk%20together%20egg,%20coconut%20milk,%20vanilla,%20sugar,%20cinnamon%20and%20salt%20in%20a%20large%20bowl%20until%20just%20combined.%20Stir%20in%20quinoa%20and%20apricots%20and%20pour%20into%20a%20buttered%209-inch%20square%20metal%20baking%20pan.%3C/p%3E%3Cp%3EBake%20in%20middle%20of%20oven%20until%20a%20knife%20inserted%20in%20center%20comes%20out%20clean,%20about%2040%20minutes.%20Serve%20warm%20or%20at%20room%20temperature.%3C/p%3E){kind=link}
