%3C/p%3E%3Cp%3EVegetable%20Risotto%3C/p%3E%3Cp%3EStep%201:%20Handle%20your%20veggies.%3C/p%3E%3Cp%3ERegardless%20of%20what%20type%20of%20veggies%20you%20choose,%20they%20should%20all%20be%20cut%20into%20bite%20sized%20pieces.%20Some%20veggies%20will%20need%20a%20quick%20saute%20ahead%20of%20time.%20Others%20will%20easily%20cook%20in%20with%20the%20risotto%20(leafy%20greens%20for%20example).%20And%20still%20others%20add%20a%20nice%20layer%20of%20flavor%20if%20you%20roast%20them%20for%2020-30%20minutes%20%E2%80%93%20which%20is%20just%20the%20time%20you%E2%80%99ll%20need%20to%20make%20that%20risotto.%20In%20this%20example,%20I%20sauteed%20some%20portobello%20mushrooms%20and%20set%20them%20aside;%20then,%20roasted%20squash%20&%20asparagus%20while%20I%20cooked%20the%20risotto.%20[not%20sure%20how%20to%20best%20roast%20the%20veggies?%20see%20note%20at%20the%20end%20of%20this%20post]%3C/p%3E%3Cp%3EStep%202:%20Prepare%20the%20Risotto%3C/p%3E%3Cp%3E1.%20Dice%20the%20red%20onion%20while%20you%20melt%202%20TB%20of%20butter%20and%202%20TB%20olive%20oil%20in%20a%20deep%20saute%20pan.%20Also,%20put%20your%20broth%20in%20a%20pan%20over%20medium%20heat.%20Warm%20broth%20works%20best%20for%20risotto.%3C/p%3E%3Cp%3E2.%20Cook%20the%20onion%20in%20the%20butter/olive%20oil%20for%202-3%20minutes.%3C/p%3E%3Cp%3E3.%20Add%20your%20risotto%20to%20this%20mixture%20and%20saute%20for%20another%202-3%20minutes.%20This%20step%20is%20important,%20it%20opens%20up%20the%20risotto%20so%20it%20will%20more%20easily%20absorb%20your%20broth.%3C/p%3E%3Cp%3E4.%20Now,%20start%20adding%20the%20broth%20%E2%80%93%20two%20ladles%20at%20a%20time%20%E2%80%93%20to%20your%20risotto.%20Once%20you%20add%20the%20broth,%20get%20out%20your%20wooden%20spoon%20and%20start%20gently%20stirring.%20Don%E2%80%99t%20stop%20stirring.%20Yes,%20that%E2%80%99s%20what%20makes%20this%20time%20consuming%20%E2%80%93%20you%20have%20to%20stand%20in%20front%20of%20it%20and%20stir,%20stir,%20stir.%20(but%20that%E2%80%99s%20not%20hard%20is%20it?!)%20The%20first%20time%20you%20add%20broth,%20the%20risotto%20will%20absorb%20it%20fairly%20quickly.%20After%20two%20or%20three%20times%20it%20will%20take%20approx%202%20minutes%20for%20the%20rice%20to%20absorb%20the%20broth.%20How%20do%20you%20know%20when%20to%20add%20more?%20When%20the%20rice%20starts%20pulling%20away%20from%20the%20sides,%20it%E2%80%99s%20ready.%3C/p%3E%3Cp%3Ebroth%20just%20added%20-%20stirring%20away!%3C/p%3E%3Cp%3Esee%20how%20it's%20much%20thicker%20and%20pulls%20from%20the%20sides%20as%20I%20stir?%20time%20to%20add%20more%20broth%3C/p%3E%3Cp%3E5.%20You%20will%20doubt%20that%20the%20rice%20can%20actually%20absorb%20all%206%20cups%20of%20broth%20%E2%80%93%20it%20can.%20It%20will%20take%2020-30%20minutes%20but%20it%20can.%3C/p%3E%3Cp%3EStep%203:%20Finish%20it%20off.%3C/p%3E%3Cp%3E1.%20Once%20all%20the%20broth%20is%20absorbed%20in%20the%20rice,%20stir%20in%20your%20veggies.%20This%20is%20also%20the%20time%20to%20stir%20in%20some%20meat%20if%20you%20decide%20to%20add%20it%20%E2%80%93%20I%20had%20some%20shrimp%20this%20week%20and%20added%20that.%20It%E2%80%99s%20also%20good%20with%20grilled%20fish%20or%20chicken.%3C/p%3E%3Cp%3E2.%20Stir%20in%20your%20cup%20of%20shredded%20cheese.%3C/p%3E%3Cp%3E3.%20Cut%20up%20one%20TB%20of%20butter%20and%20lay%20it%20over%20the%20top.%20Put%20the%20lid%20on%20the%20pot%20and%20let%20it%20sit%20for%203%20minutes.%3C/p%3E%3Cp%3Eeverything%20is%20mixed%20in,%20butter%20waiting%20to%20melt,%20time%20to%20put%20the%20lid%20on!%3C/p%3E%3Cp%3E4.%20Take%20the%20lid%20off,%20stir%20the%20risotto%20one%20more%20time%20and%20then%20serve.%3C/p%3E%3Cp%3EMmmmm%E2%80%A6.%20now%20that%E2%80%99s%20a%20yummy%20way%20to%20make%20sure%20you%20use%20all%20those%20summer%20veggies%20before%20your%20next%20trip%20to%20the%20farmer%E2%80%99s%20market!%3C/p%3E%3Cp%3ERoasting%20Veggies%3C/p%3E%3Cp%3ERoasting%20veggies%20is%20sooooo%20easy,%20it%E2%80%99s%20one%20of%20my%20favorite%20no-fuss%20ways%20to%20cook%20veggies.%20Pour%20some%20olive%20oil%20on%20top%20of%20them,%20sprinkle%20them%20with%20salt%20&%20pepper.%20Toss%20them%20all%20together%20so%20they%20are%20well-coated%20and%20put%20them%20in%20the%20oven%20on%20a%20cookie%20sheet.%2030%20minutes%20at%20400%20degrees%20works%20for%20just%20about%20any%20veggies%20out%20there.%3C/p%3E){kind=link}
