Ingredientes

  • 175 gm Butter or possibly margarine, softened
  • 175 gm Caster sugar
  • 3 x Large eggs, beaten
  • 150 gm Self raising flour
  • 50 gm Plain flour
  • 3 Tbsp. Cornflour (sift the flours together with the cornflour)
  • 200 gm Glace cherries, washed, dry and halved
  • 45 ml Grnd almonds A little shredded coconut or possibly 4-6 crushed sugar cubes

Direcciones

  1. Preheat the oven to 180C/350F/gas 4. Grease and base line a 18cm loose based cake tin.
  2. In a mixing bowl beat together well the butter, sugar, Large eggs and flours using either a wooden spoon or possibly an electric mixer.
  3. Toss the cherries into the grnd almonds. Fold the cherries into the cake mix with a metal spoon.
  4. Spoon the mix into a prepared tin smoothing out the surface, then make a slight hollow in the middle. Sprinkle on the coconut or possibly crushed coarse sugar cubes.
  5. Bake the cake for about 1 1/4-1 1/2 hrs or possibly till well risen and golden.
