,%20had%20to%20manage%20with%20some%20leftover%20cocktails%20tonight.%20A%20bit%20flat%20by%20now,%20but%20still%20quite%20tasty.%20But%20that%E2%80%99s%20neither%20here%20or%20there.%20You%E2%80%99re%20here%20to%20figure%20out%20what%20else%20you%20can%20do%20with%20those%20beautiful%20violets%20you%20spent%20all%20weekend%20foraging%20for.%20You%20did%20really%20forage,%20didn%E2%80%99t%20you%E2%80%A6?%3C/p%3E%3Cp%3EI%E2%80%99ve%20saved%20the%20best%20for%20last.%20Yes,%20another%20recipe%20that%20takes%20a%20bit%20of%20time,%20but%20waiting%20time%20really.%20The%20process%20itself%20is%20pretty%20simple.%20Leda%20Meredith%E2%80%99s%20original%20recipe%20suggests%2010%20minutes%20of%20actual%20work,%20but%20it%20seems%20I%20work%20more%20on%20the%20slower%20side.%20I%20would%20say%20half%20an%20hour%20is%20a%20generous%20and%20more%20accurate%20estimation.%20So%20what%20are%20we%20doing%20tonight%20with%20our%20purple%20little%20gems?%20Candying%20them!%20As%20a%20child%20I%20used%20to%20dip%20rinsed%20violets%20in%20sugar%20or%20honey%20and%20eat%20them%20fresh.%20I%20never%20thought%20much%20about%20keeping%20them%20for%20the%20long%20run,%20just%20gobbled%20them%20up%20as%20they%20grew.%20Preserving%20the%20violets%20gives%20you%20a%20crunchy%20little%20snack,%20if%20you%20really%20want%20to%20eat%20the%20solo,%20or%20beautiful%20petals%20to%20scatter%20on%20desserts%20or%20in%20salads,%20long%20after%20they%E2%80%99re%20available%20in%20the%20fields.%20And%20when%20candied,%20you%20still%20enjoy%20the%20most%20of%20the%20violet%20flavors.%20You%E2%80%99re%20consuming%20the%20while%20bud%20(with%20a%20bit%20of%20sugar)%20rather%20than%20an%20infused%20product%20of%20them.%20Sweet,%20floral%20and%20green%20is%20really%20the%20only%20way%20I%20know%20how%20to%20describe%20them.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20egg%20what%20until%20completely%20frothy%20but%20not%20stiff.%20In%20a%20separate,%20larger%20bowl,%20set%20sifter%20filled%20with%20powdered%20sugar.%20Line%20baking%20sheet%20with%20parchment%20paper.%3C/p%3E%3Cp%3ESifting%20over%20a%20bowl%20prevents%20%E2%80%9Ccandied%E2%80%9D%20counter-tops!%3C/p%3E%3Cp%3EHolding%20a%20violet%20by%20its%20stem,%20dip%20in%20egg%20white,%20twirling%20a%20bit%20to%20coat%20entire%20flower.%20Shake%20off%20excess%20egg%20white%20and%20reopen%20petals%20if%20necessary%20(sometimes%20they%20stick%20together).%3C/p%3E%3Cp%3EDipping%20the%20violets%20in%20egg%20white.%3C/p%3E%3Cp%3EHold%20flower%20over%20larger%20bowl%20and%20gently%20sift%20sugar%20over%20flower%20to%20fully%20cover%20(I%20find%20twirling%20the%20stem%20as%20you%20sift%20works%20well%20to%20cover%20flower).%20No%20need%20to%20worry%20about%20candying%20the%20stem,%20as%20you%E2%80%99ll%20discard%20this%20eventually.%20Place%20flower%20on%20parchment%20paper.%20Repeat%20egg%20and%20sugar%20steps%20with%20the%20rest%20of%20your%20violets.%20Make%20sure%20the%20violets%20are%20separated%20enough%20so%20none%20of%20the%20flowers%20touch.%20As%20your%20sifter%20runs%20out%20of%20powdered%20sugar,%20simply%20scoop%20up%20the%20excess%20from%20the%20large%20bowl%20to%20refill.%3C/p%3E%3Cp%3EDry%20violets%20on%20parchment%20lined%20baking%20sheet.%3C/p%3E%3Cp%3ETransfer%20parchment%20lined%20cookie%20sheet%20filled%20with%20flowers%20to%20the%20top%20shelf%20of%20your%20refrigerator.%20Refrigerate,%20uncovered%20for%2024%20hours.%20As%20the%20flowers%20dry%20most%20of%20the%20sugar%20will%20be%20absorbed%20by%20the%20egg%20white,%20creating%20a%20glaze%20on%20the%20petals.%3C/p%3E%3Cp%3EThe%20next%20day,%20take%20the%20sheet%20of%20violets%20out%20of%20the%20refrigerator%20and%20let%20sit%20out%20at%20room%20temperature%20(in%20a%20place%20that%20gets%20sun%20is%20best)%20for%20another%2024%20hours.%20Once%20candying%20process%20is%20complete,%20snip%20off%20stems%20and%20discard.%20Transfer%20violets%20to%20an%20airtight%20container%20and%20store%20at%20room%20temperature.%20Candied%20violets%20will%20keep%20for%20a%20couple%20of%20months.%3C/p%3E%3Cp%3EMake%20sure%20not%20to%20overfill%20your%20container%E2%80%93you%20don%E2%80%99t%20want%20to%20damage%20the%20delicate%20petals!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
