Receta Freezer Breakfast Sandwiches
So a couple months ago, I broke the Jones family's big news that our oldest got engaged. It has taken me these two months to come to terms with it and to stop staying up all night with worry. Seriously. This child hasn't kept me from sleeping this much since she was a little nursing newborn. For the record, I preferred being awake with a hungry baby to being awake with worry over an adventurous young adult.
Just as I had come to a good place with the May 2014 wedding, I received a text (yes, a text!) informing me they were going to move the wedding to this December. My good place bailed on me and jumped out the window.
I am not upset that they moved up the wedding date but I am STRESSED!!!!!! All of a sudden, a wedding that was going to take months and months to plan, prepare and pull together, now has to be done in a matter of weeks. Plus, the wedding is right after Christmas so we get to mix in all the normal Holiday stress with Wedding stress. I pray I come out the end of this still sane. I have my doubts.
These sandwiches are exactly what I needed in my freezer during all this crazy stress. I needed something my kids could pull out of the freezer and make for themselves before school. They seriously only take a few minutes to make and cost significantly less than what you would buy them for at the store. I can make 24 for pretty close to what a box of 6 of the brand name ones cost. I buy my ingredients from Wal Mart because they sell large bags of 12 english muffins in the refrigerator section that are much cheaper than other brands. I also use their big bags of turkey sausage patties in the freezer section which again, are much cheaper and for me, that means better :)
Homemade Breakfast Freezer Sandwiches
(makes 24 freezer sandwiches)
- 18 eggs
- 3/4 C milk
- 1 1/2 tsp salt
- 3/4 tsp pepper
- 24 english muffins
- 24 frozen sausage patties (I use turkey sausage)
- 24 slices of cheese
1. Preheat oven to 350 degrees. Generously spray a large jelly roll pan (13 x18 inch) with nonstick spray. Beat together the eggs, milk, salt and pepper until completely combined then pour into the greased pan. Bake for 20-25 minutes until the center is firm when you shake the pan and doesn't wiggle. Cut the eggs into 24 even squares by cutting four even rows down the length and six even rows across the width.
2. Lay out the english muffins across your countertop, layer a sausage patty, a slice of cheese and then one of the egg squares. Top it and then tightly wrap each sandwich individually with plastic wrap before freezing. To prepare them to eat, unwrap the sandwich then remove the english muffin and place it in the toaster. Put the inside of the sandwich on a plate and microwave for 45 seconds, flip it over then 45 more seconds. Reassemble. Alternatively, you could also warm the whole sandwich in the microwave wrapped in a paper towel, for 1 minute on each side but we prefer the toaster method.
