- Method1. Make sweet pastry: place sieved flour in a large bowl and make a well in the centre.
- Place the softened butter egg yolks and sugar into the centre and slowly combine the flour into the centre.
- Healthy pinch mix together with finger tips till all the flour is incorporated.
- Work the dough quickly and lightly into a smooth pastry using the heel of the hand.
- Wrap the pastry in foil or possibly plastic film and place in the refrigerator or possibly a cold place for 1 hour.
- Carefully roll out pastry and line 9in/ 228mm flan ring.
- Prick the base of the flan with a fork and bake blind till pastry is crisp and golden brown.
- Remove from oven and allow to cold for a few min.
- Fill the flan case with apple puree.
- Place apple slices in large bowl pour over boiling water leave for 30 secs. and drain.
- Arrange in circular pattern on top of apple puree.
- To make glaze: heat the lemon juice and jam till syrupy but don't boil. Press through a sieve and spoon over the tart to glaze.
- Place under preheated grill for 45 min.
- servings: 68small oven: 210 degrees C approx 15-20 min PREHEATED bottom shelf.
- fan oven: 200 degrees C approx 15-20 min.
