%20of%20a%20perfect%20Bordeaux.%3C/p%3E%3Cp%3EI%20started%20this%20version%20of%20Filet%20of%20Beef%20Au%20Poivre%20by%20drying%20the%20steaks%20and%20tieing%20a%20string%20about%20the%20middle%20of%20the%20steak%20just%20so%20that%20it%20keeps%20it's%20shape.%20%20Next,%20I%20cracked%20a%20handful%20of%20black%20peppercorns%20and%20pressed%20them%20into%20each%20side%20of%20the%20steak%20with%20little%20French%20sea%20salt.%20%20I%20let%20them%20sit%20for%20about%2010%20minutes%20for%20the%20flavors%20of%20the%20peppercorns%20to%20get%20into%20the%20meat.%20%20Next,%20I%20preheated%20a%20skillet%20over%20medium%20high%20heat%20with%20a%20tablespoon%20each%20of%20butter%20and%20olive%20oil.%20%20I%20seared%20the%20meat%20in%20the%20pan%20and%20let%20it%20cook%20for%20about%205%20minutes%20per%20side%20for%20medium%20rare.%20%20I%20let%20the%20meat%20rest,%20tented%20with%20foil%20for%20a%20minute%20while%20I%20made%20the%20sauce.%3C/p%3E%3Cp%3EI%20poured%20out%20all%20the%20fat%20except%20for%20about%201%20tablespoon%20and%20added%201/3%20cup%20of%20Cognac.%20%20Off%20the%20heat,%20I%20lit%20the%20liquor,%20stepped%20back%20and%20let%20it%20burn%20itself%20out%20after%20just%20a%20minute.%20%20Then,%20I%20added%20about%203/4%20cup%20of%20heavy%20cream%20and,%20over%20medium%20heat,%20let%20the%20sauce%20reduce%20until%20it%20was%20thick.%20%20I%20added%201%20tablespoon%20of%20Cognac%20to%20the%20pan,%20a%20bit%20of%20salt,%20some%20cracked%20black%20pepper%20and%20returned%20the%20steak%20to%20the%20pan%20for%20just%20a%20minute.%20%20Plated%20the%20steak%20and%20poured%20over%20some%20of%20the%20remaining%20sauce.%3C/p%3E%3Cp%3EThe%20salad%20was%20simple%20mixed%20baby%20greens%20dressed%20lightly%20with%20a%20mustard%20vinaigrette%20made%20with%20Dijon%20mustard,%20honey,%20red%20wine%20vinegar%20and%20extra%20virgin%20olive%20oil%20and%20seasoned%20with%20salt%20and%20pepper.%20%20The%20greens%20and%20the%20vinaigrette%20cut%20through%20the%20richness%20of%20the%20beef%20dish%20perfectly.%20%20A%20lovely%20way%20to%20end%20my%20make%20believe%20I'm%20in%20Paris%20day.%20%20%20Maybe...hopefully,%20someday%20I'll%20get%20there%20for%20real!!!%3C/p%3E){kind=link}
