French Canadian Tourtiere Pork Pie

Ingredientes

  • Pastry for a 2-crust (9-inch), pie
  • 1 lb grnd lean pork
  • 1 sm onion, minced
  • 1 tsp grnd cinnamon
  • 1 tsp salt
  • 1/3 c. crushed Ritz crackers
  • 2/3 lb grnd lean beef
  • 1/8 tsp grnd nutmeg
  • 1/4 tsp rubbed sage
  • 1/4 tsp pepper
  • 2/3 c. beef broth

Direcciones

  1. Prepare pastry and refrigeratein refrigerator while preparing filling. Mix pork, beef, onion, nutmeg, cinnamon, sage, and pepper in a large saucepan.
  2. Place over high heat and cook till meat loses its pink color. Stir frequently. Reduce heat to moderately low; cover and cook 20 min, stirring occasionally. Remove from heat.
  3. Fold in the cracker crumbs and the broth. Heat oven to 450 degrees. Roll out half the pastry and line a 9-inch pie plate. Spoon in hot filling.
  4. Roll out remaining pastry for top crust and place over filling. Flute edges and prick top of pastry. Bake pie 15 min.
  5. Reduce oven temperature to 350 degrees and continue baking for 30 min or possibly till golden. Serve with a tossed green salad and hot French bread.
  6. Serves 6 to 8.
