Receta French Canadian Tourtiere Pork Pie

Ingredientes
- Pastry for a 2-crust (9-inch), pie
- 1 lb grnd lean pork
- 1 sm onion, minced
- 1 tsp grnd cinnamon
- 1 tsp salt
- 1/3 c. crushed Ritz crackers
- 2/3 lb grnd lean beef
- 1/8 tsp grnd nutmeg
- 1/4 tsp rubbed sage
- 1/4 tsp pepper
- 2/3 c. beef broth
Direcciones
- Prepare pastry and refrigeratein refrigerator while preparing filling. Mix pork, beef, onion, nutmeg, cinnamon, sage, and pepper in a large saucepan.
- Place over high heat and cook till meat loses its pink color. Stir frequently. Reduce heat to moderately low; cover and cook 20 min, stirring occasionally. Remove from heat.
- Fold in the cracker crumbs and the broth. Heat oven to 450 degrees. Roll out half the pastry and line a 9-inch pie plate. Spoon in hot filling.
- Roll out remaining pastry for top crust and place over filling. Flute edges and prick top of pastry. Bake pie 15 min.
- Reduce oven temperature to 350 degrees and continue baking for 30 min or possibly till golden. Serve with a tossed green salad and hot French bread.
