.%3C/p%3E%3Cp%3EThe%20crouton,%20a%20slice%20of%20French%20bread%20toasted%20hard%20so%20it%20doesn't%20disintegrate%20into%20the%20liquid%20is%20the%20correct%20way%20to%20serve%20this%20soup.%20I%20am%20not%20a%20lazy%20eater,%20but%20I%20must%20admit%20to%20being%20rather%20prissy.%20So%20I%20cut%20my%20French%20bread%20into%20cubes%20to%20further%20ease%20my%20freedom%20to%20enjoy.%3C/p%3E%3Cp%3ECut%20a%20small%20baguette%20into%20bite-sized%20pieces.%20Heat%203%20tablespoons%20of%20butter%20and%201%20tablespoon%20of%20olive%20oil%20over%20medium%20low%20heat%20in%20a%20heavy%20skillet%20until%20melted.%20Add%20a%20crushed%20clove%20of%20garlic%20and%20cook%20for%20a%20minute%20or%20two.%20Remove%20the%20garlic%20and%20add%20the%20bread%20cubes.%20Stir%20frequently%20until%20browned%20and%20crisp.%20Leftovers%20can%20be%20used%20later%20for%20delicious%20salad%20croutons.%3C/p%3E%3Cp%3EAs%20for%20the%20broth:%20I%20am%20not%20inclined%20to%20use%20meat%20broth%20in%20a%20recipe%20that%20would%20otherwise%20be%20vegetarian.%20I%20am%20trying%20awfully%20hard%20not%20to%20go%20on%20a%20tirade%20about%20the%20current%20trendy%20use%20of%20chicken%20broth%20in%20everything--cream%20of%20potato%20soup,%20cream%20of%20mushroom%20soup.%20I%20recently%20ordered%20Spinach%20Enchiladas%20in%20a%20Mexican%20restaurant%20and%20guess%20what%20it%20tasted%20like,%20spinach?%20cheese?%20enchilada%20sauce?%20No.%20Chicken!%20I've%20heard%20the%20old%20joke%20about%20unfamiliar%20meat%20which%20%22tastes%20like%20chicken%22,%20but%20I%20have%20not%20started%20wanting%20my%20vegetables%20to%20taste%20like%20it.%20%20%20%20%20%20Oops,%20'scuse%20me.%3C/p%3E%3Cp%3ELets%20talk%20miso.%20If%20you%20are%20not%20familiar,%20I%20hope%20you%20will%20research%20it%20and%20seek%20it%20out.%20It%20is%20a%20wonderfully%20health%20giving%20and%20flavorful%20paste.%20It%20makes%20a%20delicious%20broth%20and%20is%20what%20I%20have%20used%20for%20my%20soup.%20Use%202%20-%203%20tablespoons%20of%20dark%20miso%20per%20quart%20of%20water%20as%20a%20substitute%20for%20beef%20broth%20and%203%20-%204%20tablespoons%20of%20light%20miso%20per%20quart%20for%20chicken%20broth%20in%20recipes.%20But%20don't%20add%20the%20miso%20until%20the%20end%20of%20the%20cooking%20time%20as%20the%20enzymes%20will%20be%20destroyed%20by%20boiling.%20(More%20in%20an%20upcoming%20post%20about%20miso.)%3C/p%3E%3Cp%3EFrench%20Style%20Miso%20Onion%20Soup%3C/p%3E%3Cp%3ESalt%20and%20Pepper%20to%20taste,%20being%20careful%20with%20the%20salt%20if%20using%20miso%20and%20also%20keep%20in%20mind%20the%20saltiness%20of%20the%20cheese.%3C/p%3E%3Cp%3E2%20-%203%20Tbs.%20mirin%20or%20cognac,%20optional,%20but%20highly%20recommended%3C/p%3E%3Cp%3ECook%20onions%20slowly%20in%20melted%20butter%20and%20olive%20oil,%20covered,%20for%20about%2020%20minutes.%20Raise%20heat%20to%20moderate%20and%20stir%20in%20sugar%20or%20molasses%20to%20help%20the%20onions%20caramelize.%20Cook%20the%20onions,%20stirring%20frequently,%20for%20about%2045%20minutes%20to%20an%20hour.%20The%20onions%20should%20be%20an%20even%20deep%20golden%20brown%20color.%3C/p%3E%3Cp%3EStir%20in%20flour,%20cook%20and%20stir%20for%20about%203%20minutes.%20Stir%20in%20wine%20and%20deglaze%20pan.%20Stir%20in%205%20cups%20water%20and%20simmer,%20partially%20covered,%20for%2030%20to%2040%20minutes%20or%20more.%20Dissolve%20miso%20into%201%20cup%20of%20very%20hot%20water%20and%20then%20stir%20into%20soup.%20Add%20the%20fresh%20thyme%20and%20the%20cognac,%20if%20using.%20Taste%20and%20add%20salt%20and%20freshly%20ground%20black%20pepper%20to%20taste.%3C/p%3E%3Cp%3ELadle%20soup%20into%20serving%20bowls.%20Top%20with%20croutons%20and%20grated%20Emmental,%20Swiss,%20Mozzarella,%20and/or%20Parmigiano-Reggiano%20Cheese.%20Place%20under%20broiler%20to%20melt%20cheese%20or%20use%20a%20little%20torch%20like%20I%20did.%3C/p%3E){kind=link}
