- 4 Medium apples thickly sliced, pared and cored.
- Prepare cheese topping: In a mixing bowl allow cheeses to come to room temp; beat till fairly smooth. Add in lowfat sour cream. To prepare apple filling: In a 2-quart. saucepan bring water and sugar to boil, add in apples and simmer till tender. Cover to keep hot.
- To assemble: Place 3-5 apple slices on each crepe; roll up. Place in single layer, seam side down, in chafing dish; pour over left-over apple syrup. Heat. Serve two crepes per serving. Top each with cheese topping.
