Ingredientes

  • 1 lb fresh broccoli stems peeled and sliced diagonally, separated into florets
  • 1 x red pepper diced
  • 1 x garlic clove chopped
  • 2 Tbsp. red onion chopped
  • 1/2 c. red wine vinegar
  • 1 Tbsp. extra virgin olive oil
  • 1 Tbsp. minced fresh chives
  • 2 Tbsp. minced fresh parsley
  • 1 tsp dry basil Freshly-grnd black pepper to taste
  • 1/2 head romaine lettuce torn bite size

Direcciones

  1. Steam the broccoli for 5 min. Immediately rinse the broccoli under cool running water to stop the cooking process and help the broccoli retain its bright green color.
  2. Add in the red pepper, garlic and red onion to the cooled broccoli in a large salad bowl. Combine the rest of the ingredients (except the lettuce) in a small bowl and mix well.
  3. Add in lettuce to the broccoli mix and toss. Pour dressing over the salad and serve.
  4. This recipe yields 6 servings.
