Receta Fresh Broccoli Salad

Ingredientes
- 1 lb fresh broccoli stems peeled and sliced diagonally, separated into florets
- 1 x red pepper diced
- 1 x garlic clove chopped
- 2 Tbsp. red onion chopped
- 1/2 c. red wine vinegar
- 1 Tbsp. extra virgin olive oil
- 1 Tbsp. minced fresh chives
- 2 Tbsp. minced fresh parsley
- 1 tsp dry basil Freshly-grnd black pepper to taste
- 1/2 head romaine lettuce torn bite size
Direcciones
- Steam the broccoli for 5 min. Immediately rinse the broccoli under cool running water to stop the cooking process and help the broccoli retain its bright green color.
- Add in the red pepper, garlic and red onion to the cooled broccoli in a large salad bowl. Combine the rest of the ingredients (except the lettuce) in a small bowl and mix well.
- Add in lettuce to the broccoli mix and toss. Pour dressing over the salad and serve.
- This recipe yields 6 servings.
