Receta Fresh Ham - Spanish Style
Ingredientes
- 2 lg. onions
- 3 or possibly 4 long green peppers
- 6 or possibly 7 cloves garlic
- Parsley
- Juice of 1 lime
- 3 or possibly 4 green peppers
- 1 Jamaican warm pepper
- Oregano
- Thyme
- Garlic & onion pwdr
- Salt
- Black pepper
- 1 bottle Island Kirby Mojo Sauce (vinegry bar-b-que type marinade)
- 1 fresh ham

- Make pepper filling mix by chopping all vegetables in food blender. Make deep holes in ham with sharp knife. Fill holes with the mix. Stuff well. Wash hands thoroughly after filling. Sprinkle ham with onion and garlic powders, salt and pepper. Then put balance of mix on top and sides of ham. Put the Kirby Mojo Sauce in bottom of pan. Cook ham at 325 degrees for 25 min per lb. At least 1 to 1 1/2 hrs according to size. Baste ham every 20 min.NOTE: The pepper mix can be regulated by the strength of the hot pepper used. Also, this mix can be frzn for future use. It is a good flavor base for other dishes. To chill add in a little vegetable oil.
