Ingredientes

  • 1/2 x stale ciabatta or possibly similar loaf
  • 1 Tbsp. red wine vinegar
  • 2 clv garlic peeled and crushed
  • 2 Tbsp. salted capers minced
  • 4 x salted anchovies minced
  • 1 x fresh red chilli seeded and minced sea salt and freshly grnd black pepper
  • 8 Tbsp. mixed fresh herbs (mint basil oregano marjoram parsley)
  • 75 ml extra virgin extra virgin olive oil

Direcciones

  1. Soak the bread in the red wine vinegar and 1/2 c. water for 10 min.
  2. Remove and squeeze out the liquid and put the bread in a large bowl.
  3. Add in the crushed garlic capers and minced anchovies and incorporate into the bread.
  4. Add in the chilli and season.
  5. Chop a generous amount of each herb and mix into the bread.
  6. Slowly pour in the extra virgin olive oil in a steady stream till the sauce has a rough thick bready texture.
