Ingredientes

  • 3 c. Extra-virgin extra virgin olive oil
  • 1/2 c. Raw blanched almonds Salt to taste Freshly-grnd black pepper to taste
  • 1 x Egg
  • 2 Tbsp. Warm paprika
  • 1 Tbsp. Freshly-cracked black pepper
  • 1/2 lb Manchego cheese cut 1" dice
  • 2 Tbsp. Flour
  • 1/4 c. Fresh bread crumbs

Direcciones

  1. Heat the oil to 375 degrees in 2-qt saucepan. Add in almonds. Cook till almonds turn light golden and remove with a spider to drain on paper towels. Season immediately with salt and pepper. Allow oil to remain on heat and lower heat to 360 degrees.
  2. Stir together egg, paprika, and cracked black pepper. Dredge cubes of Manchego cheese into the egg mix. Mix flour and bread crumbs together in a separate bowl. Remove cheese from egg mix and toss to coat in bread crumb mix. Place cheese cubes, 5 to 6 at a time, in oil to fry till deep golden, about 1 to 2 min, and remove to drain on paper towels. Continue with remaining cheese and serve hot.
