Receta Fried Almonds And Manchego Croquetas

Ingredientes
- 3 c. Extra-virgin extra virgin olive oil
- 1/2 c. Raw blanched almonds Salt to taste Freshly-grnd black pepper to taste
- 1 x Egg
- 2 Tbsp. Warm paprika
- 1 Tbsp. Freshly-cracked black pepper
- 1/2 lb Manchego cheese cut 1" dice
- 2 Tbsp. Flour
- 1/4 c. Fresh bread crumbs
Direcciones
- Heat the oil to 375 degrees in 2-qt saucepan. Add in almonds. Cook till almonds turn light golden and remove with a spider to drain on paper towels. Season immediately with salt and pepper. Allow oil to remain on heat and lower heat to 360 degrees.
- Stir together egg, paprika, and cracked black pepper. Dredge cubes of Manchego cheese into the egg mix. Mix flour and bread crumbs together in a separate bowl. Remove cheese from egg mix and toss to coat in bread crumb mix. Place cheese cubes, 5 to 6 at a time, in oil to fry till deep golden, about 1 to 2 min, and remove to drain on paper towels. Continue with remaining cheese and serve hot.
