Ingredientes

  • 2 x Beaver Tails
  • 1/2 c. Vinegar
  • 1 Tbsp. Salt
  • 2 tsp Soda(Baking Soda)
  • 1/4 c. Flour(seasoned with salt and Pepper)
  • 1/2 tsp Garlic Pwdr
  • 1/4 tsp Pepper
  • 1/4 c. Butter
  • 1/4 c. Sherry
  • 1 tsp Dry Mustard
  • 1 tsp Sugar
  • 1 tsp Worcestershire Sauce

Direcciones

  1. Skin Tails; clean thouroughly and wash well in a solution of salt water. Let soak overnight in cool water to cover, adding vinegar + salt to water. Next day, remove from brine, wash, then cover with solution of 2 teaspoon soda to 2 quarts. water.
  2. (This does not sound complete, how long do you leave them covered in this solution I guess you'll have to improvise a time)
  3. Dredge Tails in seasoned flour. Heat Butter in heavy skillet, and saute/fry' tails at med. low heat till tender. Mix sherry with mustard, sugar, garlic pwdr, and Worcestershire sauce. Add in to tails, and simmer gently for 10 min, basting frequently.
