Ingredientes

  • 3 x tomatillos husked
  • 2 Tbsp. bacon drippings
  • 1 x garlic clove pressed
  • 1 1/2 tsp salt divided
  • 1 tsp freshly-grnd black pepper divided
  • 1/2 tsp paprika
  • 1/4 c. thinly-sliced fresh basil
  • 1 1/2 c. self-rising yellow cornmeal
  • 4 lrg green tomatoes cut 18 (1/4") slices
  • 1 c. buttermilk Peanut oil as needed
  • 1 pkt cream cheese - (8 ounce) softened
  • 1 pkt goat cheese - (4 ounce) softened
  • 1/3 c. lowfat milk
  • 1 tsp sugar Fresh basil leaf for garnish

Direcciones

  1. Bring tomatillos and water to cover to a boil in a small saucepan; reduce heat, and simmer 10 min. Drain tomatillos, and cold.
  2. Process tomatillos, bacon drippings, garlic, 1/2 tsp. salt, 1/2 tsp. pepper, and paprika in a food processor or possibly blender till smooth; stir in basil. Cover and refrigeratetill ready to serve.
  3. Stir together cornmeal, 3/4 tsp. salt, and remaining 1/2 tsp. pepper. Dip tomato slices in buttermilk; dredge in cornmeal mix.
  4. Pour oil to a depth of 1/2 inch in a skillet; heat to 375 degrees. Fry tomato slices, in batches, in warm oil 1 to 2 min on each side; drain on a wire rack over paper towels. Keep hot.
  5. Combine cream cheese, next 3 ingredients, and remaining 1/4 tsp. salt. Place 1 fried tomato slice on each of 6 salad plates; top each proportionately with half of cream cheese mix. Top each with 1 fried tomato slice and remaining cream cheese mix. Top with remaining 6 fried tomato slices; drizzle with tomatillo dressing.
  6. This recipe yields 6 servings.
  7. Comments: For bacon drippings, fry three to four bacon slices in a skillet till crisp; remove bacon from skillet, and reserve bacon for another use.
