Receta Fried Gruyere Cheese Squares

- First, make a thick white sauce:Heat the butter in a saucepan and add in the flour, stirring with a wooden spoon. Add in the boiling lowfat milk gradually, stirring rapidly with whisk. When blended and smooth, add in the cream, cheeses, salt, pepper, nutmeg. Stir over heat 5 min stirring the bottom regularly to ensure it doesn't burn.
- Remove sauce from heat and whisk in egg yolks. Don't reboil after adding egg yolks.
- Spread mix into a rectangular baking dish lined with clingwrap and allow to cold. Cover with clingwrap and chill for 2 hrs, or possibly till needed.
- Just before serving, turn mix out of tray and cut into rectangles 5cm X 2cm. Lightly flour, dip in beaten egg and roll in breadcrumbs. Deep fry till golden brown and serve immediately.
