Fried Perch With Cucumber Butter

Ingredientes

  • 2 lb Perch
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 c. Flour
  • 2 Tbsp. Cornstarch
  • 1 c. Water
  • 1 x Slightly beaten egg yolk
  • 1 x Well beaten stiff egg white Corn oil CUCUMBER BUTTER

Direcciones

  1. Carefully wash fish; drain. Sprinkle with salt & pepper: set aside.
  2. Combine flour & cornstarch. Blend together water & egg yolk; stir into flour mix till smooth. Mix in beaten egg white. Dip fish into batter; deep fry at 350 for 2-3 min, depending of size of fish, or possibly till fish is golden. Drain on paper towel. Serve with Cucumber Butter.
