Tostones Amarillos are fried yellow or (ripened) plantains. Yellow plantains are used in Latin cuisine as a side dish. Yellow plantains are often mistaken for bananas. They are not to be eaten raw--they must be cooked. Unlike green plantains, when used for Tostones Amarillos, yellow plantains do not need to be mashed and re-fried.

Ingredientes
2 yellow plantains
1 cup cooking oil
2 tbs sugar
Spanish onions (Optional)

Peel plantains.
Cut plantains into medium diagonal pieces of about 1/2" thick, cover with sugar.
In a medium skillet heat oil over medium heat.
When the oil is hot add the pieces of plantains. Turn over twice until the plantains acquire a golden-brown color.
Rest the plantains on paper towel for about 2 minutes to absorb the oil, and serve.
You might also fry onions and put the plantains on a bed of fried Spanish onions.
