Receta Fried Yellow Plantains
Tostones Amarillos are fried yellow or (ripened) plantains. Yellow plantains are used in Latin cuisine as a side dish. Yellow plantains are often mistaken for bananas. They are not to be eaten raw--they must be cooked. Unlike green plantains, when used for Tostones Amarillos, yellow plantains do not need to be mashed and re-fried.

- Peel plantains.
- Cut plantains into medium diagonal pieces of about 1/2" thick, cover with sugar.
- In a medium skillet heat oil over medium heat.
- When the oil is hot add the pieces of plantains. Turn over twice until the plantains acquire a golden-brown color.
- Rest the plantains on paper towel for about 2 minutes to absorb the oil, and serve.
- You might also fry onions and put the plantains on a bed of fried Spanish onions.
