Frito Corn Salad

I came up with a variation of this salad using Honey BBQ Frito Twists instead of the Chili Cheese variety as a topping. Instead of using 1 TBSP of Taco Seasoning, I added 1TBSP honey and 1 TBSP of barbecue sauce to enough mayonnaise to measure 1 cup.

Ingredientes

  • 1 (12 oz.) bag frozen corn kernels, thawed
  • 2 cups finely shredded cheddar cheese
  • 1 green pepper, diced
  • 1/2 cup red onion, finely diced
  • 1 cup mayonnaise
  • 1 TBSP Taco Seasoning
  • 1 (10 1/4 oz.) bag Chili Cheese Fritos, crushed
  • Black Pepper to taste

Direcciones

  1. In a large bowl, combine thawed corn, cheese, diced bell pepper and onions.
  2. Stir well. Then add in mayonnaise and taco seasoning.
  3. Stir until thoroughly combined. Season with pepper
  4. Just before serving, stir in crushed Fritos so they stay nice and crunchy.
