,%20frittata%20ai%20carciofi%20(with%20artichokes)%20and%20frittata%20ai%20peperoni%20(with%20bell%20peppers).%20Here's%20another%20example,%20one%20of%20my%20favorites%20on%20a%20chilly%20winter's%20day%20when%20I%20want%20something%20a%20bit%20more%20substantial:%20a%20frittata%20with%20sausages%20and%20potatoes.%3C/p%3E%3Cp%3EIngredients%20(to%20serve%202-3%20as%20a%20secondo,%204-6%20people%20as%20an%20appetizer,%20snack%20or%20part%20of%20a%20buffet)%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EStart%20by%20taking%20a%20non-stick%20skillet%20and%20saut%C3%A9ing%20your%20sausages%20in%20a%20bit%20of%20olive%20oil%20over%20moderate%20heat.%20When%20they%20are%20nicely%20browned,%20you%20can%20remove%20them%20to%20prevent%20them%20from%20getting%20too%20brown,%20or%20just%20keep%20them%20in%20the%20pan.%3C/p%3E%3Cp%3ENow%20add%20your%20onion%20and%20potato%20and%20let%20them%20go%20until%20they%20are%20nice%20and%20tender,%20and%20not%20too%20brown.%20Season%20with%20salt%20and%20pepper%20as%20they%20saut%C3%A9.%20I%20find%20that%20it%20helps%20to%20add%20some%20water%20and%20cover%20the%20skillet%20for%20a%20few%20minutes.%20This%20speeds%20up%20the%20cooking%20time%20and%20prevents%20burning.%3C/p%3E%3Cp%3EOnce%20the%20potato%20and%20onion%20mixture%20is%20done,%20add%20back%20the%20sausage%20pieces%20if%20you've%20removed%20them.%20Let%20them%20saut%C3%A9%20together%20and%20get%20to%20know%20one%20another%20for%20a%20minute%20or%20two.%20If%20you%20are%20using%20the%20parsley,%20now%20is%20the%20time%20to%20add%20it%20to%20the%20mixture.%3C/p%3E%3Cp%3EWhile%20those%20ingredients%20are%20getting%20acquainted,%20beat%20your%20eggs%20and%20grated%20cheese%20together%20in%20a%20bowl.%20If%20you%20are%20using%20pecorino,%20you%20should%20not%20need%20much%20salt,%20but%20with%20parmesan%20you%20will%20want%20to%20season%20the%20eggs%20a%20bit.%3C/p%3E%3Cp%3EPour%20the%20egg%20mixture%20over%20the%20flavoring%20ingredients%20in%20the%20skillet%20and%20mix%20once%20with%20a%20spatula%20or%20wooden%20spoon.%3C/p%3E%3Cp%3EOnce%20the%20flavoring%20ingredients%20are%20more%20or%20less%20evenly%20distributed%20though%20the%20eggs,%20stop%20and%20let%20the%20eggs%20cook,%20still%20over%20moderate%20heat,%20until%20they%20have%20almost%20entirely%20set,%20except%20for%20a%20thin%20layer%20of%20raw%20egg%20on%20top,%20and%20the%20bottom%20has%20nicely%20browned%20(but%20not%20too%20much).%20During%20this%20step,%20too,%20you%20can%20cover%20the%20skillet%20with%20a%20lid%20to%20help%20the%20eggs%20set.%20The%20whole%20process%20should%20not%20take%20more%20than%208-10%20minutes.%20Use%20a%20spatula%20to%20check%20the%20bottom%20to%20make%20sure%20it's%20browning%20nicely%20but%20not%20burning.%20Regulate%20the%20heat%20if%20need%20be.%3C/p%3E%3Cp%3ENow%20comes%20the%20tricky%20part:%20you%20need%20to%20flip%20the%20frittata%20over.%20I%20do%20this%20by%20using%20two%20plates.%20You%20slip%20the%20frittata%20out,%20cooked%20side%20down,%20onto%20a%20dinner%20plate.%20Then%20top%20that%20plate%20with%20another,%20and%20flip%20the%20two%20plates%20over,%20so%20that%20the%20frittata%20is%20now%20upside%20down,%20with%20the%20runny,%20uncooked%20side%20facing%20up.%3C/p%3E%3Cp%3EAdd%20a%20little%20more%20olive%20oil%20into%20the%20empty%20skillet,%20then%20slide%20the%20frittata%20back%20into%20the%20skillet.%20You%20will%20now%20want%20to%20let%20the%20runny%20side%20cook.%20This%20will%20take%20a%20lot%20less%20time%20than%20before,%20as%20you%20eggs%20should%20have%20already%20almost%20completely%20set,%20perhaps%203-5%20minutes%20more.%20Again,%20check%20the%20bottom%20by%20raising%20a%20bit%20of%20the%20omelette%20with%20a%20spatula%20and%20take%20a%20peek%20underneath.%20It%20may%20look%20a%20bit%20misshapen%20at%20this%20point,%20but%20not%20to%20worry,%20all%20will%20be%20well%20in%20the%20end.%3C/p%3E%3Cp%3EWhen%20the%20frittata%20is%20done,%20slide%20it%20out%20onto%20a%20dinner%20plate%20again.%20I%20find%20that%20the%20last-cooked%20side%20is%20the%20most%20attractive,%20so%20once%20again,%20I%20use%20another%20plate%20and%20flip%20it%20over%20onto%20its%20'pretty'%20side.%20Let%20it%20cool%20for%20a%20few%20minutes%20and%20serve,%20cut%20into%20wedges.%3C/p%3E%3Cp%3ENOTES:%20The%20two-plated%20flipping%20technique%20is%20one%20that%20I%20%20really%20like,%20since%20it%20is%20basically%20foolproof.%20But%20if%20you%20like,%20you%20can%20use%20a%20single%20plate.%20You%20take%20the%20plate%20and%20cover%20the%20skillet,%20and%20then%20flip%20as%20described%20above.%20This%20saves%20you%20cleaning%20another%20plate%20but%20be%20careful,%20as%20the%20skillet%20is%20obviously%20going%20to%20be%20very%20hot.%3C/p%3E%3Cp%3EAnother%20technique%20is%20to%20run%20the%20skillet%20under%20a%20broiler%20for%20a%20few%20minutes,%20until%20the%20eggs%20are%20set%20and%20the%20top%20is%20nicely%20browned.%20This%20is%20even%20more%20foolproof%20than%20the%20two-plate%20flipping%20method,%20but%20don't%20think%20that%20the%20frittata%20turns%20out%20as%20attractive,%20and%20since%20the%20top%20has%20not%20'tasted'%20any%20olive%20oil,%20it%20is%20a%20bit%20less%20savory.%3C/p%3E%3Cp%3EFinally,%20they%20sell%20special%20double-skillets%20with%20interlocking%20handles%20specially-made%20for%20making%20frittata.%20I%20have%20never%20used%20one,%20so%20I%20can't%20comment%20on%20how%20well%20it%20works.%3C/p%3E%3Cp%3EThe%20recipe%20is%20a%20classic%20one,%20and%20admits%20a%20few%20variations.%20Besides%20the%20choice%20of%20cheese%20(which%20could%20also%20run%20towards%20fontina%20or%20another%20creamy%20cheese%20instead%20of%20a%20grated%20one),%20you%20can,%20of%20course,%20achieve%20a%20lot%20of%20variety%20by%20just%20your%20choice%20of%20sausage.%20And%20you%20can%20leave%20out%20the%20onion%20if%20you%20like,%20or%20substitute%20shallot%20or,%20if%20you%20want%20to%20get%20fancy,%20some%20chopped%20leeks.%20%20And%20some%20recipes%20will%20call%20for%20parboiling%20the%20potatoes%20before%20saut%C3%A9ing%20them%20with%20the%20onion.%20That's%20an%20extra%20step%20that%20I've%20never%20tried%20and,%20to%20my%20mind,%20it%20takes%20away%20from%20the%20peasant%20character%20of%20the%20dish.%20But,%20of%20course,%20no%20one%20is%20going%20to%20%20stop%20you%20if%20you%20like%20the%20idea...%3C/p%3E%3Cp%3EA%20frittata%20can%20be%20eaten%20warm%20or%20at%20room%20temperature.%20Leftover%20frittata%20is%20perfectly%20delicious,%20and%20can%20be%20used%20to%20fill%20a%20sandwich%E2%80%94in%20the%20old%20says,%20this%20was%20a%20favorite%20lunch%20of%20Italian%20workmen%20and%20field%20hands.%20A%20frittata%20is%20a%20versatile%20dish.%20It%20makes%20a%20lovely%20and%20light%20secondo,%20but%20can%20be%20a%20snack%20or%20antipasto,%20or%20serve%20as%20part%20of%20a%20buffet.%20The%20one%20thing%20it%20never%20is%E2%80%94at%20least%20in%20Italy%E2%80%94is%20breakfast.%20But%20then%20again,%20why%20not?%3C/p%3E){kind=link}
