- 1/2 cup dried (or dehydrated) apples

%20to%20buy!%20%20Ireland?%20%20Russia?%20%20China?%20%20We%20have%20friends%20living%20in%20China%20and%20going%20to%20see%20them%20seems%20like%20a%20no-brainer,%20but%20the%20mister%20would%20rather%20go%20to%20Vietnam,%20even%20though%20he's%20been%20there%203%20or%204%20times%20in%20as%20many%20years%20(I'm%20certain%20he%20has%20another%20family%20in%20Hanoi%20because%20why%20else%20would%20he%20keep%20going%20there%20-%20by%20himself%20-%20curious,%20no?)%20So...when%20I%20told%20the%20mister%20of%20my%20dilemma...not%20knowing%20which%20guide%20book%20to%20buy,%20he%20said,%20%22We%20are%20not%20going%20anywhere%20until%20I%20lose%20this%20gut!%22%20%20Since%20when%20did%20his%20gut%20become%20MY%20problem?!?%20%20Oh%20sure,%20I%20make%20the%20food%20but%20I'm%20not%20the%20one%20shoveling%20it%20in!%20%20At%20no%20time%20has%20the%20mister%20been%20tied%20down%20and%20force%20fed%20but%20now%20WE%20have%20to%20be%20on%20a%20diet...not%20that%20that's%20a%20bad%20thing,%20but%20I%20don't%20do%20well%20with%20lettuce%20and%20Mrs.%20Dash.%3C/p%3E%3Cp%3EAs%20of%20today,%20the%20mister%20is%20on%20a%20diet,%20as%20am%20I,%20so%20this%20week%20I'll%20be%20posting%20the%20lucious%20lo-cal%20recipes%20that%20will%20have%20us%20licking%20our%20lips%20until%20the%20scales%20say%20it's%20okay%20to%20buy%20a%20guide%20book%20and%20take%20a%20trip!%3C/p%3E%3Cp%3EOne%20of%20the%20things%20the%20mister%20snacks%20on%20during%20the%20day%20at%20Global%20Headquarters%20are%20those%20orange-colored%20fake%20cheese%20crackers%20-%20every%20ounce%20of%20anything%20edible%20is%20processed%20out%20of%20them%20and%20nothing%20is%20left%20but%20cardboard%20tasting%20transfat...so%20if%20he%20can%20eat%20them%20he's%20going%20to%20LOVE%20these%20bars!%20%20Chewy,%20oat-y,%20nutty,%20and%20NO-BAKE%20(except%20for%20toasting%20the%20nuts)!%20%20While%20these%20%22spa-candy-bars%22%20might%20remind%20you%20of%20a%20granola%20bar,%20they%20are%20far%20from%20dry,%20crumbly%20or%20tasteless,%20which%20is%20what%20most%20granola%20bars%20tend%20to%20be...you'll%20find%20them%20to%20be%20perfect%20for%20the%203:00%20afternoon%20cravings%20or%20the%20answer%20to%20a%20late-night-cruising%20in%20the%20pantry.%3C/p%3E%3Cp%3EAt%20155%20calories%20per%20bar%20the%20mister%20will%20be%20able%20to%20eat%20TWO%20per%20day%20-%20that%20ought%20to%20keep%20him%20happy!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees.%20Spread%20nuts%20on%20a%20rimmed%20baking%20sheet%20and%20bake%20until%20light%20golden,%20about%2010%20to%2012%20minutes.%20%20Warm%20honey%20in%20a%20microwave%20until%20the%20consistency%20of%20thin%20syrup,%20about%2030%20seconds.%20%20In%20a%20food%20processor,%20pulse%20honey,%20dates,%20cinnamon,%20and%20oats%20until%20all%20are%20coarsely%20chopped.%20%20Scrape%20out%20mixture%20into%20a%20medium%20bowl%20-%20mixture%20will%20be%20very%20stiff.%20%20Stir%20in%20nuts,%20cranberries,%20apples%20and%20coconut.%20%20Squeeze%20mixture%20into%20a%20ball,%20mixing%20with%20hands%20and%20picking%20up%20any%20loose%20bits%20in%20the%20bottom%20of%20the%20bowl.%3C/p%3E%3Cp%3ELine%20a%20baking%20sheet%20with%20foil%20and%20grease%20foil.%20%20Using%20damp%20hands,%20firmly%20pat%20mixture%20onto%20foil%20into%20a%20compact%206x12-inch%20rectangle.%20%20Freeze%20until%20rectangle%20is%20firm%20enough%20to%20cut,%20about%2020%20minutes.%20%20Lift%20rectangle%20from%20foil%20to%20a%20work%20surface%20and%20cut%20into%2016%20%20bars.%20%20(Bars%20will%20be%203-inches%20by%20about%201%201/2-inches%20in%20size.)%20%20Wrap%20bars%20individually.%20%20They%20get%20moister%20and%20chewier%20after%20standing%20at%20least%20a%20day.%20%20Can%20be%20made%20up%20to%201%20week%20ahead%20or%20frozen%20for%201%20month.%3C/p%3E%3Cp%3EThese%20would%20make%20a%20great%20gift%20for%20your%20dieting%20friends,%20too!%20%20We're%20heading%20into%20the%20second%20full%20week%20of%20January%20when%20most%20people%20give%20up%20on%20their%20diets%20-%20these%20might%20just%20help%20them%20-%20and%20you%20-%20keep%20going!%3C/p%3E){kind=link}
