%20helped%20balanced%20the%20sweetness.%20My%20kids%20didn't%20mouth%20a%20single%20complain%20though.%3C/p%3E%3Cp%3EAfter%20checking%20with%20VB,%20who%20follows%20the%20original%20recipe%20to%20a%20T,%20I%20was%20slightly%20convinced%20that%20I%20could%20increase%20the%20amount%20of%20sugar.%20I%20do%20understand%20why%20some%20recipes%20call%20for%20large%20amount%20of%20sugar.%20Sugar%20used%20in%20baking%20is%20not%20just%20for%20the%20purpose%20of%20sweetening.%20It%20has%20got%20other%20important%20roles%20to%20play.%20For%20example,%20sugar%20helps%20to%20attract%20moisture%20in%20the%20batter,%20and%20this%20in%20turn%20helps%20to%20reduce%20the%20amount%20of%20gluten%20formed%20in%20the%20flour.%20Recipes%20with%20large%20amount%20of%20sugar%20content%20will%20yield%20a%20baked%20good%20that%20has%20got%20a%20more%20tender%20crumb;%20and%20since%20less%20gluten%20is%20formed%20in%20the%20batter,%20the%20resulting%20baked%20good%20will%20rise%20better%20during%20baking%20giving%20it%20more%20volume.%3C/p%3E%3Cp%3ESo,%20for%20this%20cake%20I%20made%20for%20our%20friend,%20I%20used%20180g%20of%20sugar,%20still%20not%20the%20full%20amount%20but%20a%20'great%20improvement'%20from%20my%20first%20attempt.%3C/p%3E%3Cp%3EWith%20the%20experience%20gained%20from%20my%20previous%20attempt%20the%20day%20before,%20I%20was%20able%20to%20arrange%20the%20fruits%20in%20a%20more%20'symmetrical'%20manner.%20I%20thought%20I%20was%20quite%20brave%20to%20give%20away%20something%20that%20I%20only%20tested%20once!%20I%20just%20pray%20that%20the%20cake%20was%20well%20baked.%20What%20could%20be%20more%20embarrassing%20than%20to%20give%20away%20something%20that%20is%20under%20cooked?%20Even%20testing%20with%20a%20skewer%20may%20not%20guarantee%20that%20the%20cake%20is%20cooked%20right%20through.%3C/p%3E%3Cp%3EThe%20cake%20is%20soft,%20the%20texture%20is%20almost%20like%20a%20cross%20between%20a%20sponge%20cake%20and%20a%20butter%20cake.%20As%20the%20amount%20of%20fat%20used%20is%20not%20too%20much%20compared%20to%20the%20amount%20of%20flour,%20the%20cake%20doesn't%20feel%20greasy%20and%20yet%20it%20doesn't%20taste%20dry.%20My%20family%20members%20love%20it!%3C/p%3E%3Cp%3EI%20have%20to%20warn%20you,%20this%20cake%20is%20addictive!%3C/p%3E%3Cp%3EI%20am%20addicted%20to%20baking%20and%20eating%20it!%20I%20made%20the%20same%20cake%20again%20a%20few%20days%20later.%20This%20time,%20I%20used%202/3%20portion%20of%20the%20ingredient%20amount%20and%20bake%20it%20with%20my%208%22%20round%20pan.%20I%20also%20replaced%20about%201/3%20of%20the%20plain%20flour%20with%20wholemeal%20flour.%20The%20resulting%20cake%20was%20shorter%20but%20it%20tasted%20as%20good.%20I%20like%20the%20nutty%20texture%20from%20the%20wholemeal%20flour,%20it%20was%20like%20eating%20something%20baked%20with%20ground%20almonds,%20minus%20the%20fragrance%20;)%3C/p%3E%3Cp%3EAfternote:%20I%20made%20the%20same%20cake%20again%20one%20week%20later.%20This%20time%20I%20used%20the%20full%20portion%20of%20the%20recipe,%20but%20replaced%20one%20third%20of%20the%20plain%20flour%20with%20wholemeal%20flour.%20I%20used%20the%20same%208%22%20pan,%20and%20the%20result%20was%20fabulous.%20So%20far%20this%20is%20the%20only%20cake%20that%20could%20cause%20an%20immediate%20addiction%20in%20me...both%20baking%20and%20eating%20it!%3C/p%3E%3Cp%3EFruit%20Pastry%20Cake%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E(You%20can%20use%20strawberries,%20blueberries,%20peaches,%20bananas,%20oranges,%20pears,%20apples,%20pineapple,%20or%20any%20other%20fruits%20that%20are%20not%20too%20juicy.%20I%20omitted%20the%20sugar%20and%20used%20as%20much%20fruits,%20either%20fresh%20or%20canned,%20as%20needed%20to%20fill%20the%20top%20of%20the%20cake)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EWash,%20cut%20(chunks%20or%20slices,%20as%20desired)%20and%20drain%20fruits,%20toss%20with%20sugar%20(if%20desired)%20and%20set%20aside.%20(if%20using%20canned%20fruits,%20wash%20the%20fruits%20to%20remove%20the%20syrup,%20omit%20the%20sugar).%3C/p%3E%3Cp%3EGrease%20(with%20butter)%20and%20flour%20the%20side%20of%20a%209%22%20round%20pan%20or%20a%208%22%20square%20pan%20and%20line%20the%20base%20with%20parchment%20paper.%3C/p%3E%3Cp%3EWith%20an%20electric%20mixer,%20cream%20butter,%20sugar%20and%20sour%20cream%20(or%20yogurt)%20till%20light%20and%20fluffy.%3C/p%3E%3Cp%3EDribble%20in%20the%20eggs%20gradually%20and%20beat%20till%20incorporated%20in%20the%20batter.%20(The%20mixture%20may%20appear%20slightly%20curdled.)%3C/p%3E%3Cp%3EAdd%20vanilla%20extract%20and%20zest.%20Mix%20to%20combine.%3C/p%3E%3Cp%3ESieve%20over%20flour%20and%20baking%20powder%20and%20mix%20till%20smooth.%20(To%20avoid%20getting%20flour%20all%20over%20my%20work%20surface,%20I%20mixed%20the%20flour%20into%20the%20batter%20using%20a%20spatula,%20just%20a%20few%20strokes%20will%20do,%20then%20I%20used%20the%20electric%20mixer%20to%20mix%20the%20batter%20till%20smooth.)%3C/p%3E%3Cp%3EPour%20batter%20into%20prepared%20pan%20and%20smooth%20out%20the%20top%20with%20a%
