Ingredientes

  • 60g butter
  • ¾ cup caster sugar
  • ½ Vanilla essence
  • 2 eggs
  • 2 1/3 cups self-raising flour
  • ¾ cup sultana
  • ¾ cup currants (or half cup dates)

Direcciones

  1. Pre heat oven to 180 degrees
  2. Rub butter and sugar into flour until it resembles breadcrumbs.
  3. Add eggs and vanilla essence.
  4. Refrigerate for 1 hour.
  5. Finely chop fruit or you can use a food processor.
  6. Roll dough into 2 rectangles.
  7. Place fruit in the center and roll up (like a sausage roll).
  8. You may cut into smaller pieces if you like.
  9. Bake for 15 minutes or until golden
