%20in%20the%20rum.%3C/p%3E%3Cp%3ESprinkle%20a%20little%20of%20the%20flour%20over%20the%20fruit.%3C/p%3E%3Cp%3ECream%20the%20butter%20and%20sugar%20together%20until%20the%20sugar%20crystals%20have%20dissolved.%20%20Add%20the%20beaten%20egg%20yolks,%20jelly%20and%20molasses.%20%20Mix%20together%20well.%20%20Add%20the%20flour%20and%20mix%20until%20well%20combined.%20%20Totally%20optional,%20stop%20and%20take%20a%20deep%20breath%20of%20the%20wonderful%20molassessy%20goodness%20wafting%20out%20of%20the%20bowl,%20take%20a%20small%20spoon%20and%20taste.%20%20Look%20at%20the%20dog%20who's%20sitting%20by%20your%20feet%20sniffing%20the%20air,%20dip%20a%20little%20of%20the%20raw%20dough%20out%20for%20her%20and%20let%20her%20have%20a%20taste.%20%20Then%20tip%20some%20of%20the%20fruit%20into%20the%20bowl,%20mix%20adding%20the%20rest%20of%20the%20fruit%20a%20little%20at%20a%20time,%3C/p%3E%3Cp%3Etil%20it's%20all%20mixed%20in.%20%20%20Add%20the%20nuts,%20if%20you%20haven't%20already.%3C/p%3E%3Cp%3EAnd%20I%20have%20to%20say,%20I%20love%20my%20Kitchenaid,%20that%20fruitcake%20batter%20gets%20a%20little%20heavy%20to%20move%20around.%3C/p%3E%3Cp%3EFold%20in%20the%20beaten%20egg%20whites.%3C/p%3E%3Cp%3ESee%20how%20much%20lighter%20the%20batter%20appears?%20%20%20That's%20the%20magic%20of%20the%20egg%20whites.%3C/p%3E%3Cp%3EDivide%20dough%20into%20two%20well%20greased%20and%20parchment%20lined%20loaf%20pans,%20bake%20at%20275%20degrees%20until%20done.%3C/p%3E%3Cp%3EI%20baked%20mine%20for%20just%20over%202%20hours.%20%20%20Test%20for%20doneness.%3C/p%3E%3Cp%3EAnd%20I%20should%20note%20here,%20I%20used%20Craisins%20instead%20of%20the%20raisins.%20%20But%20I%20did%20get%20sultanas.%3C/p%3E%3Cp%3ETake%20fruitcake%20out%20of%20the%20parchment%20lined%20pans,%20and%20peel%20off%20the%20parchment.%20%20%20Set%20on%20a%20cooling%20rack.%3C/p%3E%3Cp%3ELet%20cool.%3C/p%3E%3Cp%3EAfter%20baking,%20wrap%20well,%20in%20some%20rum%20soaked%20cheesecloth%20and%20set%20in%20a%20dark%20place%20to%20cure%20for%206%20-%208%20weeks.%20%20At%20least%20I%20made%20it%20under%20the%20wire,%20and%20my%20fruitcake%20now%20has%20time%20to%20get%20nice%20and%20boozy%20and%20rich.%3C/p%3E%3Cp%3EI%20don't%20know%20if%20I%20should%20admit%20it.%3C/p%3E%3Cp%3EBut%20I%20cut%20into%20one%20of%20the%20cakes%20already%20and%20tasted%20it.%20%20%20Then%20I%20wrapped%20both%20of%20them%20up%20in%20some%20rum%20soaked%20cloths%20and%20put%20them%20into%20a%20ziploc%20bag%20and%20left%20them%20in%20nice%20dark%20place.%20%20%20I'll%20check%20on%20them%20in%20a%20couple%20of%20weeks,%20add%20some%20more%20rum%20to%20it,%20and%20just%20feed%20them%20every%20couple%20of%20weeks%20until%20Christmas.%3C/p%3E%3Cp%3EBut%20I%20also%20realized%20that%20I'd%20cut%20down%20on%20the%20amount%20of%20fruit,%20but%20ummm,%20didn't%20cut%20the%20recipe%20for%20the%20batter%20by%20as%20much%20as%20I'd%20cut%20down%20on%20the%20amount%20of%20fruit,%20so%20the%20two%20loaves%20I%20made%20are%20good,%20but%20not%20as%20'fruity'%20as%20I%20would%20have%20liked.%20%20But%20I've%20still%20got%20some%20fruit%20left%20and%20it's%20now%20soaking.%20%20%20In%20rum%20that%20is.%20%20%20giggle.%3C/p%3E%3Cp%3ECause%20I'm%20on%20a%20fruitcake%20roll.%3C/p%3E%3Cp%3EUmm,%20did%20that%20sound%20funny?%3C/p%3E%3Cp%3EGo%20have%20some%20fun%20in%20the%20kitchen.%20%20Next%20up%20for%20me%20are%20cookies.%20%20I'm%20going%20to%20make%20some%20Grand%20Slams%20next.%20%20Haven't%20had%20them%20in%20a%20few%20years,%20but%20I'm%20in%20the%20mood%20for%20a%20sugar%20rush.%20%20%20%20%20And%20these%20deliver%20that.%20%20%20%20I'll%20tell%20you%20all%20about%20them%20as%20soon%20as%20I%20make%20them.%3C/p%3E){kind=link}
