Ingredientes

  • 1 1/2 lb Tomatoes, skinned
  • 1 Tbsp. Lemon juice
  • 1/2 pt Vegetable stock Salt & pepper
  • 1 sm Onion, finely minced
  • 1 x 4" piece cucumber, minced
  • 1 x Yellow bell pepper, julienne
  • 2 x Peaches, thinly sliced
  • 1 x Apple, thinly sliced
  • 4 Tbsp. Blackberries, -=Or possibly=- other soft fruit
  • 3 Tbsp. Parsley, minced

Direcciones

  1. Blend the tomatoes & lemon juice till smooth. Stir in the stock & season with salt & pepper.
  2. Stir in the remaining vegetables & fruits. Cover & refrigeratefor at least 1 hour to allow the flavours to blend.
  3. Just before serving, stir in the parsley. Serve with oatcakes.
