Receta Fruity Gazpacho

Ingredientes
- 1 1/2 lb Tomatoes, skinned
- 1 Tbsp. Lemon juice
- 1/2 pt Vegetable stock Salt & pepper
- 1 sm Onion, finely minced
- 1 x 4" piece cucumber, minced
- 1 x Yellow bell pepper, julienne
- 2 x Peaches, thinly sliced
- 1 x Apple, thinly sliced
- 4 Tbsp. Blackberries, -=Or possibly=- other soft fruit
- 3 Tbsp. Parsley, minced
Direcciones
- Blend the tomatoes & lemon juice till smooth. Stir in the stock & season with salt & pepper.
- Stir in the remaining vegetables & fruits. Cover & refrigeratefor at least 1 hour to allow the flavours to blend.
- Just before serving, stir in the parsley. Serve with oatcakes.
