%20I%20like%20a%20chunky%20sauce%20but%20in%20this%20heat%20I%20don%E2%80%99t%20want%20to%20simmer%20it%20for%20hours,%20so%20I%20use%20a%20base%20to%20get%20me%20started,%20then%20just%20add%20tomatoes,%20fresh%20basil%20and%20seasonings.%20This%20time,%20I%20decided%20to%20see%20how%20shallots%20in%20butter%20would%20taste%20as%20a%20foundation%20for%20a%20quick%20summer%20tomato%20sauce,%20and%20I%20really%20liked%20the%20way%20it%20turned%20out.%20Here%E2%80%99s%20the%20recipe!%3C/p%3E%3Cp%3EI%20chose%20to%20make%20it%20with%20frozen%20turkey%20meatballs%20from%20Trader%20Joe%E2%80%99s%20mixed%20into%20the%20sauce,%20with%20a%20side%20salad%20featuring%20additional%20tomatoes%20from%20our%20garden.%20Greens%20were%20just%20one%20head%20of%20romaine%20that%20I%20picked%20up%20at%20a%20sidewalk%20stand%20on%20my%20way%20home.%20The%20pasta%20pictured%20is%20penne,%20but%20you%20can%20use%20anything.%3C/p%3E%3Cp%3EGarden-Fresh%20Tomato%20Sauce%3C/p%3E%3Cp%3EINGREDIENTS%3C/p%3E%3Cp%3EDIRECTIONS%3C/p%3E%3Cp%3EPlace%20the%20frozen%20meatballs%20in%20a%20medium%20sauce%20pan%20if%20you%20are%20making%20this%20sauce%20with%20them%20included,%20then%20pour%20in%20the%20entire%20can%20of%20crushed%20tomatoes%20and%20heat%20over%20medium-low,%20covered,%20while%20you%20chop%20the%20tomatoes%20from%20your%20garden,%20farmer%E2%80%99s%20market%20or%20CSA.%20I%20used%20between%205%20and%206%20smaller%20tomatoes,%20but%20eyeball%20it.%20You%20always%20want%20to%20have%20more%20sauce%20than%20not%20enough.%3C/p%3E%3Cp%3ERoughly%20dice%20your%20shallot%20and%20let%20it%20rest%20in%20a%20cup%20of%20water%20that%20just%20covers%20it%20(yes,%20I%20used%20a%20baby%20food%20bowl!)%20which%20helps%20them%20to%20get%20a%20little%20less%20sharp.%20In%20a%20small%20skillet,%20heat%20a%20tablespoon%20(approximately)%20of%20butter%20(or%20your%20choice%20of%20a%20substitute%20spread,%20such%20as%20Smart%20Balance)%20over%20medium-low%20until%20melted.%20Add%20the%20shallot%20to%20the%20butter%20and%20cook%20for%20a%20few%20minutes,%20seasoning%20with%20salt%20and%20pepper,%20until%20translucent.%20Turn%20off%20the%20heat.%3C/p%3E%3Cp%3EWhile%20the%20can%20of%20crushed%20tomatoes%20and%20meatballs%20simmer,%20add%20any%20seasonings%20to%20the%20%20sauce%20pan%20and%20keep%20covered%20over%20low%20while%20you%20boil%20water%20to%20cook%20the%20pasta%20until%20al%20dente.%20Drain%20the%20pasta%20and%20rinse%20under%20cold%20water%20so%20it%20stops%20cooking.%3C/p%3E%3Cp%3EAdd%20the%20shallots%20(including%20the%20butter)%20and%20freshly-torn%20basil%20to%20the%20sauce.%20Season%20with%20salt,%20pepper,%20and%20your%20choice%20of%20other%20spices%20such%20as%20garlic%20powder,%20oregano,%20sugar,%20etc.%20I%20used%20a%20hearty%20Italian-style%20blend.%20Cover%20again%20and%20let%20simmer%20a%20little%20while%20longer.%20If%20the%20sauce%20looks%20too%20thick,%20add%20a%20splash%20of%20water%20or%20olive%20oil;%20if%20it%20looks%20too%20watery/thin%20or%20there%20isn%E2%80%99t%20enough,%20you%20can%20do%20what%20I%20did%20%E2%80%94%20throw%20in%20some%20leftover%20pizza%20sauce,%20which%20I%20always%20keep%20on%20hand%20%E2%80%94%20or%20add%20more%20garden%20tomatoes%20to%20bulk%20it%20up.%20Really,%20this%20is%20a%20very%20flexible%20recipe%20and%20you%20can%20sort%20of%20play%20it%20by%20ear!%3C/p%3E%3Cp%3EI%20like%20to%20add%20in%20some%20more%20freshly%20shredded%20basil%20right%20at%20the%20end,%20and%20then%20more%20on%20top%20of%20the%20plate%20when%20I%20serve%20it.%20But%20I%20REALLY%20like%20basil,%20and%20there%20is%20a%20LOT%20in%20Mark%E2%80%99s%20garden%20right%20now.%20Pretty%20much,%20once%20the%20meatballs%20are%20cooked%20through%20(aka%20fork%20tender),%20this%20is%20ready%20to%20eat!%20I%20don%E2%80%99t%20mix%20the%20pasta%20and%20sauce%20together%20in%20one%20pan,%20but%20rather%20plate%20the%20penne%20and%20pour%20some%20sauce%20and%20meatballs%20over%20it,%20and%20finish%20with%20my%20side%20of%20salad.%20As%20Georgia%20says,%20%E2%80%9Cdeeee-licious!%E2%80%9D%3C/p%3E%3Cp%3EBasil:%20It%20goes%20with%20everything.%3C/p%3E%3Cp%3EYou%20can%20serve%20this%20however%20you%20like,%20with%20or%20without%20a%20side,%20and%20I%E2%80%99d%20bet%20you%20could%20also%20add%20meat%20to%20the%20sauce%20as%20well%20if%20you%20wanted%20to%20brown%20some%20sausage%20or%20ground%20beef%20up%20with%20the%20shallot.%20I%20almost%20threw%20in%20some%20roasted%20eggplant,%20too,%20but%20it%20was%20so%20hot%20I%20didn%E2%80%99t%20really%20want%20to%20put%20on%20the%20oven%20to%20bake%20it.%20Penne%20was%20great%20but%20any%20pasta%20you%20prefer%20will%20do%20just%20fine!%20This%20came%20out%20tasting%20like%20I%E2%80%99d%20simmered%20it%20for%20hours,%20when%20in%20reality%20it%20is%20done%20as%20soon%20as%20the%20fresh%20tomatoes%20have%20broken%20down%20to%20your%20liking.%20The%20longer%20you%20cook%20it%20the%20more%20they%20will%20fall%20apart%20and%20liquify,%20but%20they%20taste%20good%20no%20matter%20how%20chunky%20you%20leave%20them.%20I%20myself%20prefer%20them%20to%20hold%20a%20little%20bit%20of%20form.%20I%20also%20added%20my%20favorite%20spaghetti%20sauce%20seasoning,%20the%20organic%20blend%20from%20Wildtree,%20which%20added%20so%20much%20flavor.%3C/p%3E%3Cp%3EI%20can%E2%80%99t%20believe%20we%20have%20a%20two%20year%20old%E2%80%A6this%20feels%20like%20just%20yesterday%20(although%20this%20doesn%E2%80%99t).%20Here%20she%20is%20on%20her%20birthday,%20at%20two%20minutes,%20one%20year,%20and%20two:%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
