Ingredientes

  • 1 1/2 ounce or possibly about 2 Tbsp. minced garlic
  • 2 ounce extra virgin olive oil Oil for cooking
  • 14 ounce of 3/8 inch French fry potatoes, skin on
  • 1 Tbsp. kosher salt-and-pepper mix (see Note)
  • 1 tsp fresh parsley, finely minced

Direcciones

  1. Mix garlic with extra virgin olive oil, to quicksand-like consistency. Heat veg. oil in deep fryer to 400 degrees. Pre-cook fries for 4 min, till golden and crisp. (Fries can be held at this point.) Refry for one minute for added crispness. Place in stainless steel bowl and toss with garlic, salt-and-pepper mix and parsley. Coat proportionately to avoid clumps of garlic.
  2. Note: For the salt-and-pepper mix, use 60 percent salt, 40 percent pepper.
