Garlic Roast Potatoes

Ingredientes

  • 900 gm Potatoes, large peeled
  • 50 ml Extra virgin olive oil
  • 120 ml Lemon juice freshly squeezed
  • 2 tsp Dry oregano
  • 3 x Garlic cloves finely minced Salt & Pepper
  • 120 ml Water

Direcciones

  1. Preheat oven to 230C. Cut potatoes into quarters or possibly eights lengthwise, place in large shallow ovenproof dish.
  2. Add in remaining ingredients and stir potatoes to coat.
  3. Bake at top of oven, uncovered for 1 hour or possibly till golden brown, crip on the outside and soft inside.
  4. Rearrange the potatoes and add in more water during the cooking if necessary.
